Healthy-ish Vegan Banana Bread Recipe | Oil, Dairy, and Egg Free Baking with Sourdough Discard
I know, there are loads of vegan banana bread recipes out there. But what about healthy-ish oil free, sourdough discard recipes? WITH REDUCED SUGAR? Plant based baking is all about mixing things up a bit so why not try to take some of the calories out of it while we do it? If you are up to it, then you could even probably make this entirely refined sugar free just by dropping the sugar all together! The natural sweetness of the fruit is plenty in my opinion.

4 very ripe bananas (3 mashed and one sliced long ways in half)
1/4 cup of brown sugar
1/4 cup of unsweetened applesauce
1/2 cup of sourdough discard (you can leave this out if you don't have it, just use less flour)
2 tablespoons of ground flax seed
1 teaspoon of baking powder
1/2 teaspoon of baking soda
2 cups of all purpose (you may need more or less depending on how wet your batter is)
A pinch of kosher salt
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
Mix-ins (these can be cut or changed to whatever you might prefer)
1/4 cup of walnuts
6 medjool dates chopped
These directions may be a little out of order from the video but it will have the same result!
Peel and mash 3 of the bananas in a bowl. Add the sugar, applesauce, and sourdough discard. Mix and follow with the ground flax seed, salt, baking powder, and baking soda. Mix again.
Start with 1 cup of flour, the rest should be added gradually. Fold the 1 cup of flour into the wet mixture. At this point you can also add the cinnamon and nutmeg. Once the dry flour has been folded in then add another 1/2 cup of flour and fold it in again. Then follow with another 1/2 cup of flour. The batter should be similar to thick pancake or cake batter. If the batter is too wet then continue to add in flour 1/4 cup or 1/2 cup at a time until the desired consistency is reached. You probably won't need more than 3 cups for this amount of bananas but use your best judgement. Don't over mix, if you do then the batter may develop gluten which would make the bread a little tough and chewy.
Add your desired mix ins and fold gently to incorporate. If you are using fruit, try coating it in flour to help it not sink to the bottom of the loaf.
Grease and line a loaf pan with parchment paper. Leave a little bit of the paper sticking out of the top so that you can just life the loaf out after baking. Pour the batter into the pan and smooth it out with a spatula. Try to fill in any gaps or corners evenly.
Preheat your oven to 360 F or 180 C. When the oven is hot, put the loaf in to bake for 50-60 minutes to start. Your loaf will likely take longer. You can check if the loaf is done by poking a toothpick or fork into the middle. If the fork comes out clean then it is done. If not then put it back in for another 10-15 minutes and repeat until it is done. In the video my loaf took about 1 hour and 12 minutes.
Allow the loaf to (mostly) cool and then slice it up and enjoy for breakfast or a snack anytime!

I think if you roll them out before the last rise they will develop gases in the dough which will expand when you cook it and blow it up. Doing it the way you did you when you rolled them it squeezed the gases out of the dough so they didn’t blow up.
Way too mucky for me. I think that sourdough has a process for a reason.

Thank you for this recipe! The way to puff them up on the stovetop, is to heat the dough for 1 minute, then flip it for another minute, the puffing happens usually on the third flip. Good luck!

Hi. Your video is very funny. Although, to be clear, I think you are over complicating a process that (especially in the interest of being lazy) really is much less work than you’ve made it. Search for Autumn Kitchen’s Sourdough Pita recipe, and cut the baking time she suggests down a bit. I found her baking time gave me over-baked pitas…but, everything else works! Also, be sure to, as someone else recommended in another comment, to let your rolled out pitas rest/proof/rise before baking them. A couple of reasons you may not have been successful with getting your pitas to puff up in the oven are that you have been using too low temperature, and not letting them rest 20-30 minutes after rolling out. I bake pitas at 485F for 4 minutes. You don’t need to worry about burning yourself when turning them over, because you are NOT supposed to turn them over in the oven! Mine are fully puffed after 2 minutes, and fully baked at 4 minutes. One thing that you also really don’t need to do is to spray cooking oil on anything to do with pitas…not for any part of the process, unless you are cooking them in a pan, in which case, I think then it doesn’t matter. I use flour to keep pitas from sticking, after I have formed the divided dough into rounds (shaping) and for the 30 minute rest after shaping. Oil on the outside of the dough will burn in a 485F oven, so you really want to avoid having oil on the surface of the dough. (The oil that’s in the dough is fine, though.) Anyway, here’s to a way lazier process for you next time…at least if you’re open to new ideas and to making a few changes. Hey, it’ll give you way more time to make hummus, and way more time to search for fun videos on TH-cam! 😊 Note: Puffed pitas are filled with insanely hot steam! Be careful not to burn yourself! Another note: I toast pitas on the shortest setting in my toaster…to reheat, because I prefer them warm, which makes steam form inside the pocket…so, don’t be like me and forget that it’s insanely hot, even just after a minute in the toaster. Ouch! (My poor thumb.)

Something ist wrong with your Recipe. With only 61% Hydration will be no dough so sticky.

please take my advise as a pita maker for years, after flatten it let it rest for 1-2 hours and then bake it in order to get air bucket inside. good luck next time

Thank you for sharing I will definitely try this sourdough recipe. As far as the pockets, I used to make a yeast pita bread recipe and you put the baking sheets in a 450° oven while it’s preheating then when you’re ready you throw your pizza dough on the hot baking sheets and they take 4-6minutes and they almost always pop up and have the pocket. Recipe also called for bread flour which is not required but gives a better rise

I love it! The intro is great and I have everything but the tahini, so I will have to pick some up to try this. I am hooked on sweet potatoes -- so what are your tricks for making them in different ways?
Well I don’t eat much sweet potatoes but my favorite thing to do with basically any vegetable is cut it in pieces and roast at 425 F for 25-30 mins, flipping halfway. I have also previously made a black bean, sweet potato, and quinoa chili. You could also make oven fries with sweet potatoes, some folks recommend tossing them lightly in corn starch to make them crispy on the outside. I’ll add sweet potatoes to my content list and see what I come up with.

Last year, I bought my first weekly planner for the first time since high school, and I was so excited to use it :\ This year, I'll wait until next year to buy one lol.
I’ve never been good with paper planners. I’ll start out very ambitiously but then I’ll taper off. I have used different kinds of notebooks and task managing apps but I’ve found recently that just using a google doc and spreadsheet has been really affective for me recently. I was thinking about doing a video in the future about my organization method using them but I think I need to get in the swing of things first.
