How To Prepare Chicken Luwombo
Luwombo is one of Central Uganda’s favourite dish. In this video we explore the preparation of Chicken Luwombo.
It looks intimidating but it is actually really easy.

INGREDIENTS & TOOLS
Whole Chicken- 1
Tomatoes - 1
Onion - 2
Carrot - 1/2
Green bell pepper - 1/2
Garlic cloves - 2
Salt to taste
Margarine/Cow Ghee - 1 Tablespoon
Small Basket
Banana leaves - 3
Special Luwombo Banana leaves - 4
Small banana fibre
INSTRUCTIONS
Roast the chicken until golden brown.
Cut it into pieces, wash them and set aside.
Over medium heat, mix the rest of the ingredients except the margarine.
After about 3 minutes, add margarine, mix and add a little water. Let it simmer for about 2 to 3 minutes, remove from heat and let it cool. (When put on heat, Luwombo produces its own soup so please add just little water)
Assemble the Luwombo banana leaves (a half of the smaller leaf inside a bigger one) and place them on the small basket. Press your hands on the banana leaf area that is directly over the basket to create a depression.
Put 3 Pieces of chicken in the depression and pour 2 serving spoons full of the tomato gravy.
Cut a very small Luwombo leaf and cover the chicken, then pull together the ends of the Luwombo leaves and tie with a small piece of banana fibre. Cut off extras to make it neat.
In a big saucepan, create a base using banana leaf stems (Mizingonyo) and pour in water quarter way. Fold a small piece of banana leaf and place it on top of the base.
Get a whole banana leaf and place it on, and gently put the Luwombo bundles. Fold the ends of the banana leaf underneath.
Get two more banana leaves, fold them together and tack them in neatly. This helps to keep the steam from escaping.
Put on fire and cook for about 5 to 6 hours. Do an occasional water check and add when necessary so that it does not burn.
Serve hot. (It is best to serve it in its leaves in a small bowl)

    All the steps are right but there is an important step called oiling to get layered chapatis. Also so that they can get a beautiful brown color almost all over. Check out Kenyan chapatis. Not in bad faith. Fena tuli mkuiga.
