Making Chicken Stir Fry with Siobhan Muir
Chicken Stir Fry is a great way to use up all those vegetables that are hanging out in your fridge. Not only does it seem like a fancy way to eat, but it's healthy and will help clean out your fridge in a tasty way. Plus gluten-free without even trying!
INGREDIENTS
2 lbs of chicken, chopped (we use chicken thighs)
1 head of broccoli or a small bag of florets
1 leek or bok choi, washed and chopped
2-3 carrots, cut in sticks
1 yellow pepper, 1 red pepper, sugar snap peas, zucchini, cauliflower - any combination of them works great
1 can of baby corn, drained and rinsed
1 can of water chestnuts, sliced, drained
Sesame oil
Garlic
Sesame seeds
Soy Sauce or Bragg's Amino
DIRECTIONS
Add about 2 Tbsp of sesame oil into the bottom of a large, deep sided pan. Saute the leeks until they are soft and translucent. Add the meat and another Tbsp of oil, and cook until the meat is no longer pink. Add some garlic and sesame seeds to the pan and stir.
Add the vegetables and stir to combine. You want the sesame oil, garlic, and sesame seeds to be mixed throughout.
Add the baby corn and the water chestnuts, dump in 1/3 cup of water, cover, and steam for about 15 minutes.
Add about 1 Tbsp of soy sauce, stir, and serve over rice. Makes enough for 6-8 people.

My hubby has been wanting this for years. I hope you don't mind but I have many questions please. Can I use self rising or AP flour? Do people sometimes use pecans? Does the Pudding have to be Family Size instead of 3 boxes of regular? One last question: does my hubby have to share because I want to try it too. 😉
You can use any all purpose flour, I prefer gluten-free. I've never tried self-rising, but it's not needed here. You can always use pecans. I use the "Family Size" pudding because it's more convenient for me, but you can use 2-3 boxes of regular, depending on how thick you want the pudding layer. Yes, your husband MUST share, lol
Sugar free cool whip is wonderful and i sprinkle mini sugar free chocolate chips on top, or make a sugar free chocolate drizzle. There's a recipe ive been looking for for years, its called chocolate sin. I wonder if anyone has heard ofvit and maybe would share the recipe. Thanks in advance ✌️❣️

I used to fry biscuits with a hole cut out then sprinkle powder sugar over it and called it a donut. At least until, I found out I was gluten intolerant.

It's very easy and yeah, you have to like pasta. I don't eat noodles either, but this is a good way to make them quick so others can enjoy a pasta meal.
