The range is kind of misleading though. The advertised range is only true IF you do not care about the ambient temperature. If you use the TW ambient solution, the range is limited to about 4 feet (the length of the wire) and the range of your wifi. Also, many early reports are that TW did away with the option to update temp data from the meat probe based on time intervals and now only have the option based on temperature changes.

I'm interested in comparing the Gozney Arc and Gozney Arc XL for pizza businesses and catering. Does the Arc hold temperature better and recover faster than the Gozney Arc XL? Also, comparing the Gozney Arc versus the Gozney Roccbox for business, with a bit more focus on the business vibe. Most reviews are geared towards home use and regurgitating data, without real restaurant experience. Even people buying for home use find added value knowing it can be used for commercial purposes. That's why everyone is asking for a comparison between the Gozney Roccbox and Gozney Arc!

I love them both! But the Arc is so much more of an oven for the price. Makes it so easy with the new Lateral Flame Design. Cooks evenly with less turning.
I have experience working in pizzerias, and now I have the opportunity to work in a pizza catering for 50-60 people, but outdoors. In the pizzeria, I worked with gas pizza ovens, but now I need to buy a small oven. Would your suggestion be the Pizza Party Emozione, Gozney Arc (Small), or Gozney Roccbox (maybe two pieces)? That is awesome! I have had great success cooking for large groups on multiple Roccbox’s. However you may consider the Arc. It gives you a little more space, however if you are looking for portability it is hard to contend with the Gozney Roccbox!
I’ve owned like 5 peels and the one that comes with the Roccbox is by far my favorite. I will be getting an Arc XL. Money, you guys should really consider making a 16” peel for it.

Do you think the Gozney Arc XL could be suitable for a small pizza business, or is the Gozney Dome a better choice due to its temperature retention after baking 15-20 pizzas? Or are two Gozney Roccoboxes better for a small business than the Gozney Arc XL? Please give an honest answer.
So many business have been using 2 RBX's and or a Dome for years now. Not saying the Arc could not work splendidly, but I still think those 2 have been put through the paces for many years with great sucess.
This should have amazing heat retention with how thick the stone is. And it’s less than half the weight of the Dome. I’d go with this since you could transport it by yourself. Unless you’re Brock Lesnar you’ll need at least 1 person to help move a Dome. And the arc having the temp probe under the stone is super.
@@Bigheadedwon Exactly. Stone thickness, double insulation layer and the New Lateral Flame Design has the best heat retention without the weight of the dome. Small foot print and massive cooking surface. Xl is easy to move solo.
Also by pizza business do you mean a food truck? The Dome has a chimney so you could vent the propane out the top or side of the van. In an enclosed space, an Arc XL would be unusable. Where you could have a custom chimney made for the Dome or S1. Having an outdoor setup you'd need help moving the Dome, but with the Dome you could do 2 smaller Neo pizzas at once which would be a big plus if you're doing a lot of pizzas. I don't know your timeline to start this, but Ooni's going to be announcing the Koda Max sometime shortly. There were some leaks about it. It has dual burners and a 24" stone. As long as you weren't running it in a van or enclosed place. This would be an awesome oven as you could launch 4 11'ish inch Neopolitians and cook them at the same time. Also, it will fit on the same Ooni table I had my Karu 16 on. So it's "small" enough for 1 person to handle. This should be a super oven for someone with a popular street food setup. It's supposed to be out sometime in June and be no more than $999. Another plus to it over either Gozney, if you plan to do any NYs, you could do 18-24" pizzas for slices if you wanted to sell slices. As much as I love the Arc XL and I do want one. I'm personally holding out for the Koda because of the gigantic floor. I'm about to start a street vendor pizza thing and the ability to cook huge pizzas or 4 11" ones in an oven I could move around myself would be a game changer.
Please answer the following questions: 1. What is that round black grille on the front top? 2. Is it a kind of chimney and does hot air come out of it ? Since the new pizza oven is to be placed under our carport, hot air must not escape upwards, as is the case with a Dome chimney, for example ?
1. That is the flue. 2. Yes. Essentially the chimney/flue. The same as the Dome.
Bummer the smaller one doesnt come in black as well though, aside from that, looking forward to it!
