Part 3: Mom’s Secret Tandoori Biryani Recipe |Tandoori Baby Chicken
My mom’s biryani dish is so unique because of the tandoori flavour baby chicken she adds instead of regular chicken pieces. Every time she makes it we all enjoy it so much so I asked her to teach me the secrets 😉
Ingredients & method below for you to enjoy ☺️
Baby chicken marrinade
-1 baby chicken
-1/2 cup olive oil
-2 tbsp tandoori masala
-1/2 tsp salt (tandoori masala already has salt so we will not add too much)
-1 cup natural yogurt
-1 tbsp each of garlic & ginger paste
-Red food colour (optional)
Biryani sauce
-1 cup oil
-2 onion diced
-3 green chillies
-6 cloves garlic
-4 medium potatoes
-1 cup tin tomato
-1 sachet biryani mix spices
-1 tsp salt
Rice
-1kg rice
-3 litres water
-1/2 tsp salt
Garnish
-2 onions sliced and fried
-Fresh coriander
-Lemon slices
Method
-Soak rice for 2-3 hours before starting to cook for best results
1-Marinate the baby chicken in all the ingredients mentioned above -Bake on middle shelf at 200C for 50 mins
2-Make the gravy- Heat olive oil in a pan, add onions and soften them. After 3-4 mins add green chillies and garlic cook for a few mins. Add tin tomatoes and all of the spices mentioned above. Add a glass of water and cook for around 10 mins stirring regularly, add potatoes and continue to cook until potatoes are cooked half way, still regular and add a splash of water (should take around 15 mins). Turn heat down and set sauce aside
3-Make rice. Cook the rice in water with a tsp salt, cook the rice 80% not fully. Drain them
4-Assemble- Once chicken is cooked through. The the oven dish out and layer on the rice, garnish and biryani gravy and serve hot

Thank you for posting the written details. For the pastry, there are several excellent substitutes for Bishop's Weed (Carom Seed), such as oregano + black pepper (50/50). I especially appreciated the flour quantity given in grams. This allows for consistent results when the water is expressed in grans as well. When everything is converted to grams, and expressed as a percent of total flour, you have bakers' measurements, and can achieve great precision and consistent results no matter how much or how little flour you want to use. As a single person, I have no need for 90 samosas, so I divide the recipe by six.
Thanks for the great feedback Exactly why I almost swore when my mum said she’s making 60 samosas in the video They freeze really well though and can be taken out at a later date to fry or air fry Also you can split the recipe in half and make half the amount as I made here 🥰 Enjoy

I've recently bought this rice cooker, never having owned one before. And although it's easy to use I found it frustrating there are no cooking instructions for basic rice. All the recipes I have seen say to check your rice cooker manual for the correct ratio of rice to water. Is it the same for all rice? Basmati? Sushi? Jasmine? And if so what is the correct ratio? I've tried 1:1 (definitely not enough water) I tried 1:1½ but still seemed a little dry. I'd appreciate the advice of someone who uses this machine themselves. Also when I normally cook rice I put a little salt in the water. Should I be putting salt in the water? Is there anything else I am missing....sorry for the dumb questions, I'm just a little frustrated the user manual didn't cover this!
Hey, not a silly question at all. It’s mad they didn’t put the main basic rule on there . For every one measured cup that they provide I actually use 2 and a half cups of water using the same cup.. I also soak the rice for 30 mins to an hour before I cook them in the rice cooker and I kid you not they taste so nice and are so fluffy. Also yea add salt, pepper or any spice you want. I even add peas and carrots to mine Let me know how you get on ✨
@swaad_official_uk thank you so much. I've just done a cook today using the 1:1½ method and added a tiny bit of sesame oil and salt. It looks a little softer. But will definitely try your 1:2½ method as I've been used to parboiling and steaming my rice in a pan which has always given me lovely rice.... apart from the times when I've forgotten about it and burned the pan....hence the need for a rice cooker 🤣
@blus00p rice cooker is a game changer for me. My mum teaches me how to cook rice in my next video which is out in a few days. Something I should know how to cook haha

I have one question, though, about the initial setup. Does the 4blade shaft get clicked and secured to the pin? Mine goes inside the pin but is a bit wobbly and did not click tight to the pin. Is there a reason why you don't just use the quick cook setting on the Cosori one instead please? Have you tried the quick cook setting and is it any good? 😊
Thanks for your message ☺️ seen as the Cosori one is so big.can you imagine how long it takes to heat up in the first instance before it even thinks about cooking anything. Imagine 1 cup of rice and some water at the bottom of that big appliance.. even on quick cook 40 mins is too long for one portion of rice. Russel one is perfect when I’m making a small portion of rice for 2 for eg. Hope I made sense 😀
@swaad_official_uk Thank you for your reply 😊. Yes, that makes sense. I bought the Cosori one yesterday. It is coming on Sunday. I wish I'd asked you before buying it. The quick cook setting was the main reason for me buying it. I already have a Yum Asia Kumo rice cooker, but that doesn't have a quick cook setting. Now that you've said the Cosori takes 40 minutes on the quick cook setting, it has put me off. 🫣 Not sure what I'll do now. I usually cook two portions at a time. I'll have to decide what to do when it arrives. 😊
