From Doctor to Chef: My spiced bread recipe that's better than pumpkin
In today’s video, I’m sharing my favorite cozy fall recipe: Butternut Squash Spiced Bread! 🍂 If you’re a fan of pumpkin bread, you’ll love this unique twist that’s just as flavorful and nourishing. Butternut Squash Savory Soup Recipe: From Doctor to Chef: My Cozy Anti-Inflammatory Butternut Squash Soup | Delicious Plant-Based Recipe
BUTTERNUT SQUASH SPICED BREADSOUP
Ingredients
Dry:
2 ⅓ cup All purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp sea salt
1 tsp cinnamon powder
¼ tsp ginger powder
½ tsp all spice
½ tsp cardamom powder
¼ tsp ground cloves
Wet
1 ¼ cup cooked butternut squash puree
1 cup brown sugar
⅓ cup olive oil
½ cup plant based milk
1 TBS Apple cider vinegar
2 tsp vanilla extract
Steps
Preheat oven to 350 F. In bowl add vinegar to milk ( best with soy milk) and let sit for 5 minutes
Sift all dry ingredients into large bowl and whisk until combined
In large bowl whisk butternut squash puree and brown sugar together until combined and then add olive oil
Once all combined add milk, vanilla extract to bowl. Pour half of dry ingredients into wet bowl and whisk slowly until just combined ( to prevent overmixing). Use a spatula to stir the remaining half of the dry into the wet
Place parchment paper into loaf pan and pour batter into pan. Even it out. Add line in middle with knife about ½ inch in depth if you like for nice puffiness at the end of bake
Bake for 40-45 minutes until toothpick inserted in remains dry.
Let sit in pan for 5 minutes once taken out and then use parchment paper to sit on wire rack and rest another 5 minutes before slicing. Enjoy!

Thanks for the video Chef! Is a holding rod better than a knife sharpener? I have a knife sharpener but it doesn’t seem to get my knife very sharp. I also have a glass cutting board which may be dulling my knife.
@KC-TH-camName Hey! You are most welcome! I would say the honing rod helps keep a knife sharp for longer but it's still key to use a knife sharpener depending on how often you use it. You're right a glass cutting board can often dull the knife

Maaaan, I don't even LIKE plant based food and I'm ready to eat this. That looks amazing! I'm one of those unfortunate people with weak DNA that makes cilantro taste like soap, though, so I'll have to figure out something else for a sauce but dang. Looks fantastic!
@apocalypso3427 awww so glad you like it! Let me know if you wber make it too. Yes I'm the same with cilantro(by itself its soapy to me) but blended with the other ingredients it's great. You can sub it for parsley instead to still get the color
@@ChefShaylaMD I may try it just like you made it to see if maybe the soapy flavor disappears for me as well! When I've had it before, it was always in things like pico de gallo where the flavor was highlighted rather than blended and I'd love to be able to experience some foods with it where I didn't hate the taste. Might as well experiment with this sauce (it seriously looks amazing). I'll be sticking around and watching all your videos for a long time, I think, so I'll definitely update you when I try this one! <3 Keep shining! Thank you so so so much for these recipes, Chef/Dr Shayla! I've tried the chickpea scramble twice and I tried the banana french toast today. So delicious! When I used to eat scrambled eggs, I would sautee cherry tomatoes and red onions to put on top, and now I add them to the chickpea scramble... so good. The Lord has definitely gifted you! So where would soy curls fall on your chart ? I recently discovered them, they’re so versatile, love them!
Oooh ! I'd never heard of them until now. These sound awesome. What I read says it's whole soybeans boiled and then dehydrated. Since it's minimally processed I'd put them with twmpeh(fermented soybeans) and right before tofu. I have to try them. Thanks for the tip
