Mujadara - Lebanese Rice with Lentils and Crispy Onions
Mujadara is one of the easiest yet most popular Middle Eastern rice dishes. It consists of rice with green lentils, topped with caramelized onions which add to the unique flavor of this simple Middle Eastern rice dish. This staple dish is very easy and quick to make, perfect for busy days.
📝 INGREDIENTS
For Rice & Lentils:
400 g (2 cups) Basmati rice
400 g (2 cups) green lentils
2 tsp groun cumin
2 tsp salt
1 tsp Seven Spice (see info below)
1500 ml (6 cups) water (indication; I'll tell you more about it in the video)
For Fried Onions:
4 onions yellow, medium-large
60 ml (4 Tbsp) olive oil
1/2 tsp cumin
1/4 tsp salt
About Seven Spice:
Seven Spice is a Middle Eastern spice blend. You can find the spice blend at any Middle Eastern grocery store. No Baharat at home? Substitute with ground cinnamon, coriander and cumin (⅓ tsp of each for 1 tsp Seven Spice). Those are the three most important spices in Seven Spice.

    Hello Kitty , liked the dish you cooked but being from India ...i guess it's missing some twists 😊( if you have access to any Indian grocery store) get a packet of " Meat Masala" & " Sahi Garam Masala" Post cutting the meat, just use a tea spoon of the meat masala + little curd to marinate , 15-30mins max Then cook the way you do , just add half a teaspoon of "Sahi Garam Masala" just before you take this cooking pot off the oven/cooktop Give it a try , let me know.... happy cooking 🎉

      Hello Sanjay! Thanks a lot for your suggestion 🤗 I can imagine that from an Indian perspective this dish will be very plain haha. Indian food has many more spices in variation and quantity. When I cook fasolia for just myself, I sometimes add turmeric (haldi) and Seven Spice (similar to garam masala) as well, but the "traditional" version doesn't have them (just my preference). Many greetings to India (I loved the food when I visited India😍)

      That's a really good question. For traditional fasolia most people generally prefer tomato paste as a base. It's said to create more depth and a better texture for this sauce, although I think this can be achieved with fresh and fully ripe tomatoes as well.

It's definitely worth the effort and once you know some basic rules (like the rice-water ratio and heat I explain in the video), it's actually very easy :) I must say "boil in the bag" rice isn't too bad either, but it's a bit more expensive & it's always plain.       Thanks a lot for your great feedback, I appreciate that 🤗 To answer your question on Za'atar: Za'atar is a popular Middle Eastern spice blend which has mainly dried thyme and oregano, sumac and sesame, which also make for a slightly nutty and acidic flavor profile. That pairs very nicely with the marinade, the chicken and potatoes. There are really many many ways to make this dish, so of course, you could take other seasonings too.

      You can serve it with a lot of different sides. Of course the famous hummus (I've a video for this recipe on my channel) or tahini sauce (I also have a recipe video for that). In the Middle East, you'll also find fresh mint, pickles (pickled cucumber and pickled turnips), raw onion and some times other mezze like ful on the table. It all depends when it's served, how many people are there etc. And of course, don't forget the bread :) So if you want to make falafel for a large group, you can serve a lot of things alongside (omelets, beans, vegetables...). If you want to make a tasty falafel just for yourself, you can serve with bread, some hummus or tahini sauce, and if you like some pickles or other raw vegetables/herbs. Happy cooking :)

      Hello :) Yess true, I have eaten it many times in some of my Turkish friends homes too. It's a very popular dish in many countries. The Lebanese vs. Turkish version is a bit different though.

    After I cut it, I drank the juice of the chunks as it created its juices naturally, but how long does it last the fridge?

      That great! Cut watermelon and watermelon juice last in the fridge for about 3-4 days. From my experience, the taste fades away the longer you store it. I try to eat/drink mine within 1-2 days after preparing it so that it still tastes fresh and sweet ☺

      Ok, thanks! I had a big one & it’s only me to eat it, & I was trying to make the juice last longer than it should in a mason jar 😅

      You can put Watermelon 🍉, in the Freezer For 4-5 Days.
