This is in conjunction with my podcast Commercial Kitchen Chronicles. I will be highlighting what it takes to be a commercial kitchen repairman, as well as all trades.
We messed up
In this video, we installed a new condensing unit, evaporator, and lineset for a walk-in cooler. I handled the inside section while a colleague managed the rooftop condensing unit.
After we finished, he mentioned he hadn’t set the time clock. I reminded him that it needed to be tied into an outdoor solenoid or break power to the contactor coil, but it was only wired for power. He set it for two 30-minute defrost cycles, which should have been fine for a cooler.
However, the unit froze up again. The first thing I did was check the condensing unit, and I found that the time clock wasn’t breaking anything. It was an easy fix and a good teaching moment for my techs.
Be on the lookout for condensing units with time clocks. If it says "field installed," ensure anything tied into them is set up correctly.

Air flow issue or draft issue secondary air for top oven is getting full of combustion gas from bottom oven
So long as your dynamic gas pressure is ok, then I would think flue gas from the bottom oven is making its way into the top oven combustion chamber and suffocating the flame?

Well all 3 coils came in damaged lol
@@CommercialKitchenChronicles tat blows. I had a 4 door freezer coil that came in damaged earlier this year. Had to be from the factory because they shipped it out in a wooden crate and there was no external damage.

Yep has to be indirect drain. Had a Jackson Tempstar plumbed straight into a grease trap once, they wondered why the machine smelled bad and had a coating in the wash tank. Ripped that mess out and rerouted.
Not your fault, but I always laugh how easy screws/bolts come off in tutorials. My biggest problem is the seized screws. The rest is usually easy lol

@@CommercialKitchenChronicles i use hot water on the fan side but sometimes when its a freezer I go heat gun on the backside to avoid water getting on the floor and freezing up

It's out my league, first problem to deal with in a heat problem, my guess it you already took a looking at provided coat of insulation, not option, the constant of current wasn't calculated right throw a fan in side 5v should do, vent holes, and last if you step wire up you haven't solved the over heating of the unit, did I make good observations or am I off I have study that yet heat sinking right.

Yup. That tracks. Most people who get those Hoshizaki's treat them like an AK-47. Never clean them, run them into the ground and then wonder why they no longer work as well as it used to... crazily enough those Hoshizaki's can keep making ice through much of that abuse. I wouldn't want that ice though.
