Great video! I just have one question. So after taking the steak off to finish cooking for 10 minutes or so, if you were to poke it and some of the juices go out, would that cause the internal temperature to be reduced and not “continue to cook” as much in that time?

A thermometer? lol Juice will come out, but it’s the residual heat in the steak itself, not the juice that continues to cook the meat. If you poke it continuously then it might become dry.
Fair enough, guess I was just wondering how much the juices play part in the off-the-stove cooking. Negligible?
Juice does play a role since it’s part of the steak but it’s negligible if a little comes out when you use a meat thermometer. Some folks poke it continuously and that’s where you can run into problems with dryness. I love juice too much so I don’t use one. But yes, you are correct.
