My problem with this guy was that secondary attack he would sometimes do after you Mikiri counter him. Once I learned to be ready to deflect that I was able to beat him.

The biggest suggestion i could give you is that holding the block button is the most unhelpful thing you can do. Deflection is practically instantaneous and allows you to always be ready to respond even when standing still, in fact the game encourages the player to do just that. To always be ready, keep an eye on the enemy's arm holding the weapon. Bosses always have animations that telegraph when the attack will hit, always having a preparation phase that warns you that an attack is coming, followed by a quick change in movement that announces the release phase and tells you that it's time to deflect.
