I love to cook recipes from many different cultures. Italian cooking is my background, but as a chef I have learned to cook from many world cuisines. They are all wonderful and different but all so unique in relation to what has grown in their region and what spices might have been traded.

I tried out Ina Garten's recipe for risotto cakes, and they are so good! Crunchy on the outside and creamy in the middle. I just changed out the chives in her recipe for fresh basil. Looks delicious, but don't pour your broth in the drain. Add less water to it from the start. I nearly fainted when you poured the good bit off. Happy thanks giving.

Fascinating idea. (saved that link to file) But a few ideas of mine: I always save the peels of everything that is not a potato and clean and without mold to make a stock. Many times save it up in the freezer, until I've gathered enough of it. Stems of mushrooms can go into that, as well. (Shiitake stems are chewy, but packed with flavour.) To the actual mash, I could think of adding italian parsley or chives, like I do add to my mashed potatoes. Maybe even finely chopped sage or oregano. Mint, if I was an englishman? The playing with herbs is fascinating to me. Greetings from the far north of Germany!

Lovely - depending on what is available (affordable) to you. I would definitely use more onion, probably a little garlic, and definitely celeriac or a few celery stems.

No no for me. You didn't wash your lentils also a whole lot of Teflon.
@@genevekisson8639 it isn't necessary to wash the lentils. Also i don't own teflon. That pan is hard anodized aluminum. Thanks for your thoughts though.
