Ingredients
150g beetroot, diced
150g carrots, diced
150g yellow bell peppers, diced
100g kale/spinach, chopped
75g red cabbage, shredded
1 onion (approx. 120g) & 2 garlic cloves (10g), minced, 2 leaks diced
1 tsp turmeric, 15g ginger, grated
Fresh parsley & cilantro (handful each, roughly 15g)
1L vegetable broth
Salt & pepper, to taste
2 tbsp olive oil (30ml)

Instructions:
In a pot, sauté onion, leak, garlic, ginger, and turmeric in olive oil.
Add beets, carrots, and bell peppers; briefly cook.
Add broth; simmer for 15 mins.
Stir in kale and cabbage; cook 5 mins.
Season with salt and pepper; garnish with herbs.
Serve this nourishing, liver-friendly soup and enjoy! 🥣✨
