Thank you for your question. I will answer to the best of my knowledge. In the printing world, an "em" is a measurement of width, so you cannot have a short-lined or long-lined em-dash. There are function keys and symbol keyboards that allow users to select em-dashes directly on both Apple and Microsoft computers. However, two hyphens are perfectly acceptable; and although I am not familiar with Apple products, I know that Microsoft Word automatically revises two consecutive hyphens into an em-dash.
