How to Dry Age Fish without a chiller! | Wild Food Scientist POV Catch & Cook Tutorial
This video describes how to dry age fish without the need of a special chiller or cooler, but simply using paper towels, cling wrap and fresh fish (freshly caught yellowtail kingfish) ie dry-aging fish without the need for a purpose-built fridge/chiller.
Dry aging fish is perfect raw fish, sashimi, sushi, poke bowls etc
I explain the entire process from dispatch (inc bleeding, ike jime and shinkei jime), then into preparing the fish (inc scaling and tips what not to do), through to dry aging (inc things to watch out for and dos/don'ts) to the most important part, eating dry-aged fish.
Since I'm a food scientist, I also include a bit of the scientific reasoning how dry-aging works and why it helps to improve the taste & texture of fish.
This video was filmed in New Zealand; however, the learnings apply to any dry aging of meat & fish including within Australia, United States, UK, EU etc

Paper towel = kitchen rolls, kitchen paper, or kitchen towels is an absorbent, disposable towel made from paper. We use the Kirkland Costco paper towels as I find them the best but you can use any and they'll still work!
Cling Wrap = Plastic wrap, cling film, Saran wrap, cling wrap, Glad wrap or food wrap is a thin plastic film typically used for sealing food items in containers to keep them fresh over a longer period of time.

Why not put the knife in a vice and use a soft sanding block?
@NytryderKitt hey mate I'm sure you can do this too! This is just how I was shown. I think cause this way you determine the right angle/edge by running it up sideways? that's my thinking anyway but I'm not expert myself!
@fisheatrepeat allgood mate I was just curious I'm a chef so I use a stone anyway but always interesting looking at other techniques
@NytryderKitt yea no worries! I use a stone now myself just because it's easier than getting out this paper each time. But I can't seem to get my knives as sharp as when I did it this way 🤣🤙

Smaller baits, stick with nacsan 16r snelled hooks, shorter traces, and an 8 oz breakout sinker. Then set it into the current

It prolly can do 2kg but you would be putting alot of stress on the battery and motors

Hmmmmm looks great... Whole smaller (0.5-1kg ) Kahawai for example, is it possible to do a dry age straight in the fridge, skin open to the air... I think i have seem something like that being done
@randelmatt hey mate! Yea you're absolutely right. Just make sure to gut & gill the fish (I only realized after I didn't mention that). Hanging the fish is obviously better but many of us (inc myself) don't have a chiller so this is the next best option! You can also leave the fish on a rack in the fridge but if ya don't wrap it the fridge will dry it riiiight out on the surface (as is harsher than a chiller) 🤙

@KiwiChillies hey mate! It depends eh usually I use 50-60lb which is lighter than my braid and the backbone trace so it breaks there and not halfway up my braid eh 🤙

Good tutorial brother, enjoy your safety and scientific explanation. I dry-age kingfish fillets by default now due to quantity of meat and the ability to eat it every day from day 1 to day 5-6

Bloody Hellfire ! as an ex ozzy Rabbiter to a fellow Kiwi, I wouldn't put that much trouble to cook the golden Goose ! Anyway whatever LOL.. we used to just soak in vinegar for a while and chuck em on the campfire..maybe some gravy if we were lucky. Using a bow and arrow in suburbia is a little risky id say, maybe you would do better with a good slingshot and a cheap Ghost ghillie suit. ( doubles to hide from the coppers if things go to shit) ..Put some green food down to get em in close, don't fart ors you will scare them off..

And that lawn was surprisingly large. In fact my landlord had actually requested for me to kíll them eh 🤙 so technically was pest control. Haha I always try make a feed out of what we hunt, I realize you've hunted thousands so it's a bit different but if ya ever get the chance to make double fried chicken rabbit... I'd highly recommend 🤙 cheers for the bloody amusing comment and for watching tho

I have a DJI mini 4 and I look for bait that the big fish eat I can pin point kinda where they are when out on the boat or from shore and I fish in cape Cod it’s been fun and got really close pictures and videos of the seals haven’t seen any sharks yet tho I hope this summer will see some

Hey man great watch, i love how you made everything so easy to understand. Ive been looking to get into SPJ and was wondering if you didn't have one of those electric motors or sea anchors could you still use the jigs effectively? When the boat drifts and the line is at a bad angle what do you do? Thanks
@aidenwang5501 hey mate! Awesome thanks you definitely do not need an electric motor eh, you don't need a drogue/sea anchor if the wind and current is nice and slow but the sea anchors usually around $50 I'd recommend getting one in case conditions changed eh

Thanks Dave! Awesome video. Yes, I had exactly the same thing happen when rig not released. It was such an issue that I now turn the camera right down and visualize the bait drop before returning. This change of light fishing to has changed my success drastically!!
@@RichardNorthover60 yea was a bummer eh unfortunately these things happen with new tech similar to any other drone just a learning curve and updating some software/rig setups etc but great idea using the camera to see. Awesome the change of light has helped, it's definitely my favorite for sure!!

Hey mate, the same thing happened to me. Failed drop. I've had it happen several times, and found I really had to keep an eye on the camera down 90deg to make sure the release was successful. I found a short sharp stab of the button worked best. But still had the odd occasion where it took 5-8 pushes before it would drop. Weird.??? Complete pain in the ass when you realize it's brought your line all the way back in!
@Sacrederb thanks for watching mate! Yea it was a glitch with iphones supposedly, it has since been fixed, but I also changed to using the button on the screen since that saves the way-point which is better for re-drops anyway and *I use a Samsung as my main phone but I use an older iphone to connect to the drone controller haha

Good vid mate, enjoyed watching the loss in the waves only because i do the same and it shows im not alone. I also have an aeroo and have been impressed with the handling in the higher winds. So far this summer 4 snapper, 3 kahawai and 6 hamerheads all from Ohope beach. Cheers mate

And no one would have been mad enough to fly an actual plane that day. Hopefully, i haven't misinterpreted this though?

@hdnz7802 update: yep I called the airfield to re-confirm and flying on the beach side is acceptable. He did say obviously watch out for planes and choppers may use it but in this case I was ok 👌 yea is a private airport where inland is segregated (from what I understood) 🤔 will try find out more.

nice drone rod there, i cant wait to load both the overhead and spin version up this week,the Ocean Legacy Rods, are a Weapon!!!. ( especially if you cracking with the shimano, and rod battery), you should try some of our release wires from paul's fishing systems, when connecting your backbone-i found gives you a solid connection there, no line twist... I've used the aeroo pro , and it sounds like a winner for entry level drone fishing, keep up[ the videos
@Jamiewipiiti oh nice!!! I currently don't get any line twist eh since I use a treble swivel and thick mono to my trace but I'd be interested to see what they look like anyway

I'm guessing you don't have to use swivel for this am I right? seem the setup shown here 4:45 you used a lot of split ring + (pear shaped ring) and just tied directly?
@White_Tiger93 yes correct! You want to be in direct contact (or as close) to the hooks so when you get a strike you can dig straight into the fish 🤙

@leighyarnall7346 hey thanks very much!!! The older phantoms are becoming harder to use since software isn't being kept up to date but payload wise phantom 4, convenience for travel and storage mavic air 2S (The air2 are too hard to get and too old for firmware etc hence I said air "2S") 🤙

If you're in NZ dronefishing.co.nz should be able to give you a demo run eh I've been caught out in the rain a few too many times lately so I've also been looking to try the FD1+ which is a newer FD1 very reliable and waterproof!

Do you find yourself using your aeroo drone more than your air2s now?
@markjames9746 hey Mark, yea mate absolutely! I haven't used my Air2 since I bought the AerooPro really. It's just a lot harder with manual release and a much lower payload. Main reason i kept my air2 is for general drone videos (not fishing) and if i wana do any drone fishing overseas where the aeroo is simply too big to travel with
@fisheatrepeat nice. I'm want to upgrade from my air2s as attaching the bait release can get a bit tiresome. The Aeroo certainly look the part, perhaps I just need to take the plunge.

@fisheatrepeat from Kapiti man, Do you find it frustrating that you have to plug your phone into the controller. I wish they would upgrade it to a DJI like one with a built in screen.
