This was at susquehannok campground. It’s a beautiful campground but the bathrooms are horrible. It’s a pit toilet. Luckily I have a portable toilet with me always. Hi chicken is cleaned and seasoned overnight with fresh peppers, onions, scallions, garlic, adobo, sazon and Maggi seasoning powder. You can use any dry beans however I used lentils because it cooks quickly, then added my chicken added additional fresh sweet peppers, garlic and onions. Let the chicken and lentils come to a boil then add coconut milk any brand will do and turmeric powder then add additional powdered seasoning to taste. When satisfied with the consistency you add your dumplings let it all cook for five minutes. Dumplings were made of kneaded flour with salt, I prefer the dough to be hard so it does not cook too soft. Enjoy!!
