We are an English couple living in the south-west of France. Jayne has lived here since 2004 and is now officially a French citizen. Paul joined her in 2017.
We post about life here in the South of France, usually the the things we're doing or creating. The majority of our videos are about cooking. Jayne creates new recipes from scratch, or puts a a unique touch to old favourites. Most of the recipes on here are her creations.

Black slip wasp (Pimpla rufipes)
We found this strange insect busy in the woods.
Turns out it was probably a parasitoid wasp.

Out and about in the Pyrenees we saw a vulture sitting on a gate. We got out to take a look, and there were a lot more of them than we thought.

While out and about we spotted this collection of swans. This wasn't a nature reserve, it was a flooded farmer's field. The swans seemed to be having a conference. A swan-ference.

Huge egg! Our chickens lay a giant egg.

Our chickens laid a giant 124g egg. This was about twice the size and weight of a standard egg. It made an entire omelette from this single egg. Basque hens - Euskaloiloa Marraduna.

While out and about one evening we found these cows. They are the most common race of cows near where we live in the south of France, the blonde d'aquitaine. Their babies only seemed to be a few days old. Aren't they cute?

I’ve recently run into a problem where my kefir is even thinner than what you are showing. Can someone watch this quick two minute video I made? My kefir was coming along wonderfully for 3 weeks until I took a 4 day break (in fridge). I was thinking it would be sluggish (from fridge to counter) for the first batch, but it separated massively into curds and whey in only 18 hours instead of 24. The biggest problem is that it is thin, like the consistency of milk, instead of like yogurt (well, maybe like thin yogurt). The curdles are really tiny (like baby spit up). You can see at the end of the 2nd clip. Thank you for this. From watching this is seems like a pressed ricotta style method that is then formed into halloumi. Love it - so easy and given me an idea of what to do with my whey that either gets disposed of or made into ricotta. I know what I’m going to do today…… Thanks again for posting this.

We are living in Mexico (freaking hot) almost the whole time. I bought pasteurized milk with 3 % fat I used the milk cold straight from the fridge and poured it over my strained grains. The straining I do is with a metal strainer so skip all the bullshit about using metal and using a silicone scraper i push all the kefir through the strainer in a bowl leaving the grains in the strainer thing. Now I pour a little milk over the grains ( washing them from all the bacteria) Then I put the grains back in the jar and pour my pasteurized milk with 3 % fat over it just cold from the fridge. Close the lid and put it on the counter for two days ( Mexico always warm) The strained kefir mild goes back in the milk container. I used by making new kefir. And I put it in the fridge. The next morning: 😂🎉🎉🎉 the kefir is thick ( drink yogurt) a little accidenty like buttermilk and we love it, if you want less accidy, less time om the counter. that was a lot of riding but we love it. And hope to get rid of a lot of bullshit about making good kefir.

Great video- thanks for the detail. I had to just clean the inner glass.
I froze kefir for 3 years using a different method and it took only 3 days it to be fermenting milk wonderfully. Kefir was frozen in a jar and covered with with milk but leaving at least 1/3 of free space. Before freezing Kefir I washed it in water and dried it with paper tissue.

It's a word in many languages, and so there are several pronunciations. Since it was invented in the north Caucasus, maybe we should ask them how to pronounce it.

Thank you for your video. You are delightful. I am envious that you can get raw milk from a vending machine. We are currently in Martinique where only UHT is available.
Nice video, ma'am, but the cheese making process is incomplete. That cheese you made should be cut in fingers of 1 cm each and cooked in that remaining whey at 95% till the pieces of cheese come up by themselves. Only then you can fry them in olive oil. The cheese boiled in that whey will considerably improve taste and texture.
They don't look like they enjoy the collar. And I'm sure your yapping dog is not helping.
You're making paneer, not halloumi. Still delicious and simple. But halloumi is set with rennet.
How early or late can I make this pudding and do you think it will freeze?

We picked up some pullets at the State Fair this summer, and one turned out to be a Roo. We're not supposed to have them because we are not in a rural area so I bought one of these and got it on him early. I can tell you that it is a success! He still tries sometimes, but it's no louder than ordinary Hen clucking! Before you throw your rooster in the pot, I recommend giving this a try! I can't say for sure, but starting young before they really find their voice is probably a good idea.
I have about 2 cups of grains. I want to save them but it's getting really hard to keep up with feeding them and making the kefir, so over fermented. I am worried I am losing some of the bacteria's and yeasts. I let it sit in the fridge sometimes over a month. They do continue to produce, but I'm worried about quality. I'm afraid they will not be healthy enough to dry and store.

Definitely parasitic wasp, definitely not Pimpla rufipes. The abdomen and ovipositor are too long. Pimpla rufipes has a single short, but robust ovipositor.
