Being that we now have indisputable science that points to God creating everything. Why did God create the Sun, the Moon, and the sky? For signs right. What is He telling us?

It simply means that there will not be a point where expansion of the material universe will be halted. It can go on expanding - but isn't 'space' the simple distance between existing objects?

Not quite, when it comes to 'infinity'. 'Infinity' is a mathematical concept, but it is not a number of actual objects. And there are 'reductio ad absurdum' consequences when we try to postulate a literally infinite number of objects. It may be interesting to observe that distance traveled by light in one day (186,000,000 * 3600 * 24 =~ 16 trillion miles) is equal to the perimeter of (vedic) universe (approximating ellipse to circle, perimeter of universe = 4,500,000,000 * 3.1416 =~ 14 trillion miles). If a black hole is a continual implosion gone mad, then a white hole is a continual explosion/expansion gone mad. The only thing that matches that description is the universe itself. The big bang, continually expanding universe. The universe itself is the white hole. Nothing can "enter" a white hole. Nothing can "enter" the universe because there is no "outside".
