Spicing Up a Muntons Export Stout

1can of Muntons Export Stout (or similar) 1 kg dark dry malt extract 1 kg of golden syrup . Spices. 1/4 tsp nutmeg ground 1/4 tsp cinnamon ground 1/4 tsp ground cloves 1/4 tsp coriander seeds ground 1 tsp fennel seeds. Pitched spices straight in. Us 05 yeast. 23 litres.

Have you tried making Muntons stout with brown sugar it tastes vary nice try it paul uk

Thanks beerman. Really enjoyed your travels with the guys. So , the chilli beer was with chilli sauce, not curry powder. And probably what killed the head retention from the sauce oils. It tasted good but obviously the finish wasn't great. But still,great he's trying things. Cheers Mate, and look after yourself.
i've got quite a rough one i'm fixing, will be screwing the staves to the bands and will try making a base with wire mesh - was all rotred out. will take a heap of linseed oil.

Great update as usual, I always divide by 7.36 so by my calcs it was 5.7, but it's only approx any way 🤣 (many, many formulas out there). It could have been mashed to end high, you can't tell with kits unless you do the same one a lot. A lot of stouts end quite high, gives a thicker mouth feel. A high finish doesn't necessarily taste sweet, it can be dry because a lot of unfermentable sugars don't taste sweet, sucrose is the sweetest tasting sugar but that ferments out all the way. Chilli tends to destroy a head, not sure why, probably the oil content? High Tech cleaning 🤣👍, pretty much the same as mine but I wash and reuse rather than rip it off a roll 🤣. Cheers Schnuz, I got my formula from the coopers beer kits. As long as it's ball park abv it's ok with me. My friend Tony is giving it a go as he loves his chillies. I think he will nail it soon. Thanks for your input, cheers mate.😎👍

Loving that high tech cleaning solution you've found, a definite Dragons Den idea right there. I could be wrong but I think the lack of head has something to do with the chilli, maybe oils or something. I did a stout years ago and dry hopped with chilli. Was quite pleasant with a little heat. Probably should do a small batch again at some point.

Hahaha that's what I thought. But then he told me it was actually hot chilli sauce so as Big Banana suggested would probably be the head retention issues. Loved your video brewing your fresh hops. And that steam out of the wort chiller is hot eh LoL 😂. Cheers mate. Great to hear from you.😎👍
Looking forward to seeing how the flavor of the spiced Stout comes along after it's been in the keg for a bit. Very interesting chili beer too. Brilliant high tech F.V. cleaning system! I use a high tech cleaning system very similar to yours called Soft Sponge that was recommended to me by a bloke named Trev 🥸😆It's very effective! Great update. Cheers! 🍺

Great chat, mate. That’s interesting to hear how much impact such a small amount of spices had on the final flavour. I’d be keen to try using cinnamon and nutmeg at some stage. I think I’d use lactose too…maybe an eggnog stout or a rice pudding pale ale? Love the high tech cleaning system 😂 Cheers!
@@hefsbeerreviews4127 yeah I'm happy with it, its a good starting point. Next time around I will add some crystallized orange peel and maybe swap out the yeast for a Belgium Ale. Nutmeg and cinnamon would work well with lactose. Yes I'm happy spashing out on a high tech washing system,😂 Cheers mate 😎👍
And yes, sorry. To answer your question about the small amount of additions of adjucts to a brew, always go half the amount you think would be good. The beauty of brewing is subtleties , little by little. Cheers😎👍

Nice update but those ABV's are a bit high for me, four and I will fall over 🙄🥴. The cloves is only the one that may be a little Riske and what cocked up my Experimental Spiced Winter Ale th-cam.com/video/zEiSwBO-Zok/w-d-xo.html , Although I did use 2 1/2 ts 🤭! I'm not sure, if I had added golden syrup and dark dry malt it may well have been good too but maybe a bit dryer or not as rich . I really rate adding a decent amount of golden syrup to these malty beers. It doesn't totally ferment and leaves a nice caramal roundness to the over all profile. Cheers Hef.😎👍

Yes, indeed. Adjuncts are new to me but yeah, pumpkin is on the radar. I don't want to throw a lot of different things in and cloud the whole learning process. Interesting to see if the small amount of spice makes much difference. We will see. Smooth sailing brother 😎👍
