The Sound Kitchen: Episode 1 with Bo Rinehart
Food and Music are the two universal languages in this world. The idea for this show was born over 13 years ago and we filmed the pilot episode a few weeks back. We had no budget, 45 minutes, and 1 camera but I think it turned out great!! I can't wait to get more of these in the can and keep making some amazing memories with phenomenal musicians!

It's mostly cheese and butter
This dish is all about insane cheese-to-potato ratios, but this particular recipe more than doubles the standard. Consider at a certain point whether or not you want a potato flavor.
You could make the peels a cripsy side with some sauce it is AMAZING
Aslamualaikum! Can you please provide a homemade recipe to make mozzarella cheese or any kind of cheese?. I've seen other videos but I'm unable to do it and I'm regretting that I've wasted lots of milk. Thank you
Would it make a difference if instead of boiling them, you baked or roasted them instead?
Is their a full recipe / instructions? How much chicken stock and how long did you steam them?
Add sage instead of thyme and add lawrys seasoning and nutmeg and a bit of white fried bledned onion and cheddar cheese and camembert cheese to the other cheeses.

Be careful not to overmix this or the potatoes will get gummy. Also while it's back on the stove don't turn your heat up too high or they will burn on the bottom

Tip to those who care: Don't peel your Yukon potatoes until after you boil them. The potatoes won't absorb all that water, and you can use milk or heavy cream to make it even more creamy and soft.
I’m going to ask this in a general post on this comments section, but it seems prudent to ask you as well. Would it not be even more flavorful to bake or roast the potatoes rather than boiling them. Then just cut through them and gut them with a spoon?
@@alexbaum2204yes boiling them makes the potatoes loose some flavor to the hot water.
@@alialamdaar thanks so much for the response. I tried this a few days ago. Granted, I only followed this and a couple other videos on TH-cam to do it. While it was still delicious, I did not get the consistency at all right. It wasn’t so much stringy like bubblegum. It was more just …. lumpy I guess?? It had some of the elasticity, but nowhere near what these videos show. I’ve been trying to figure out what I did wrong, but I honestly have no idea. I didn’t put the potatoes through the ricer like they suggest. I used a mixer, but I let the thing do its job for like a half hour and the potatoes seemed like they were about as smooth as they could get. Maybe that still wasn’t good enough? Maybe it was that I folded the broth and cheese too much? Maybe I didn’t use enough butter? I’m rambling and taking up your time. Sorry. But perhaps you might know why it came out goopy instead of gummy like in every video out there. Thanks for any help.
@@alexbaum2204 yes I had the same problem and i was trying to make them as smooth and silky as possible but it was coming lumpy but this is not because of boiling and not baking but its is the way we mash them makes them smooth. I use a potato masher after peeling the skins them immediately transfer the semi mashed(is what i call them) to a steel round strainer then push it out with a spatula or a wooden masher into a bowl then i just do the process normally sometimes i add cheese spread which has jalapeño or any other flavour which i felt was more easy to mix.

Did you use unsalted butter as he said to do so? Using salted butter could yield the results you speak of.
Wanna take it from great to 3 star restaurant grade? Put them through a tami sifter after adding milk and butter.

Just eat them baked. Whole. Then you get all of the nutrients from the potato and you get none of that fat that you are adding. What thinking person would still be eating mashed potatoes full of things like butter and cream?

I'll do you one better: just eat them raw, from the soil, whole, then you actually get *all* of the nutrients and none of the boiled water you're adding or maybe chill and let people enjoy things, there's much unhealthier dishes than this 😊

Sorry to say that from the Aubrac (Aligot is from there), but "Mozza" and "Gruyere" or "Emmental" aren't part of the Aligot, cause it's some "Fresh Tome" with the potato. Otherwise, it's not aligot, just... mashed potate with cheese. It's not the "texture" who made the dish, but the taste.
