Creamy Cheesy Potato Frittata | Cheesy Egg Skillet | Potato and Egg Recipe | Foodie Micky
Ingredients:
• 5 eggs
• 2 tomatoes, chopped
• 1 bunch of spring onions, chopped
• 250 ml fresh cream
• Salt (to taste)
• 2 medium-sized potatoes, thinly sliced
• 1/2 tsp salt (for potatoes)
• 1 tsp red chili powder
• Crushed black pepper (to taste)
• Cooking oil
• Cheese (grated, for topping)
Instructions:
1. Prepare the Egg Mixture:
o Crack 5 eggs into a bowl and whisk them well.
o Add chopped spring onions, tomatoes, a pinch of salt, and fresh cream to the bowl. Mix thoroughly and set aside.
2. Prepare the Potatoes:
o Heat some oil in a frying pan and spread it evenly.
o Once the oil is hot, layer the sliced potatoes evenly in the pan.
o Sprinkle 1/2 tsp of salt and 1 tsp of red chili powder over the potatoes. Mix gently.
o Cover the pan with a lid and cook on low-medium heat for about 5 minutes.
o Once the potatoes are slightly tender, sprinkle crushed black pepper. Cover again and cook until the potatoes are fully done.
3. Cook the Egg Mixture:
o Pour the prepared egg mixture over the cooked potatoes. Spread it evenly across the pan.
o Cover the pan with a lid and cook on low heat until the egg mixture sets.
4. Flip and Add Cheese:
o Once the egg mixture is firm, carefully flip the dish using a plate (as demonstrated in the video).
o Sprinkle grated cheese on top and cover again.
o Cook for another 5 minutes until the cheese melts and the bottom side is golden.
5. Serve:
o Transfer to a plate, slice, and serve hot. Enjoy your creamy potato and egg skillet!
