Kinda stingy with the meat!!
The loading tube design is problematic. It often gets stuck.
Use a wire brush first around the base where the handle meets. Then, do the inner wall where it is inserted into the smoker. This should make it operate smoother. Be prepared to put in at least a beers worth of effort as any pit master might put in two.
How can I just order one that is already put together like you mentioned at the beginning?

Do you add water to the wood chips
Never! Most electric smoker manuals clearly say not to. Also, it does not make sense to me why you would add water to something you want to smoke. First it needs to steam to dry off and I avoid steam as much as possible.

I noticed that you did not use the water pan? Do you use it with flavored liquid? Also, after the initial 4 hours, how long does it cook after you flip it?
I never add water to my smokers. I know many people swear by this but in my experience it just make a mess of the inside of your smoker. Basting, spritz, or bbq sauce are all good options. Sometimes I will use spray olive oil to keep the surface moist.... I can recall the time on this video but the reason I don't state it regularly is because it varies so much. I estimate a regular pork butt 8 hours at 275 plus an hour rest.
Why would you even bother to move the handle?
because it is in the way if you want to put food on the front shelf.
Cool video. Liked. I am researching using pellets in a East Oak electric smoker (received as a Christmas gift). Never smoked anything before and most places say pellets are OK in a unit like mine even though they are not recommended but you should put them in a foil pouch w/ holes poked in it (pellets burn faster, I guess). Any thoughts on that? Thanks!
No foil. That is something that you could do on a grill, works really well on to of two charcoal briquettes. All electric smokers burn the same way, just start with a small load, like a 1/4 cup. If the temperature is too high they could ignite, but a small amount will be gone in a second. That still is not likely. I am using pellets on a regular basis since this video... Smoking cheese tomorrow.

I am going to save your other comment so I can reply in a few weeks with a vertical short to answer your question. In the Masterbuilt vertical electric smoker the woodchips will turn to white ash, mostly consumed unless the chucks are really large.

It would have been extremely helpful if you would have shown the thermometer much much closer. When you hit the buttons I couldn't see what was happening on the thermometer. I had high hopes. But still can't set mine!

What happens to the original power cord? Is it still used?
I left it in place and secured it to the side. I want to be able to reconnect it back to the factory cord and removing it from the passthrough grommet would make that difficult.
We always throw the original box upside down over it to help keep the heat in. Smoked a bunch of fish in them.
I have done that also. I still think this is my favorite fish smoker but the low temperature limits it's versatility.

Great question. These are rocks from my creek or off the ground. They sell ceramic briquettes for gas grills that also would work well.

Hi! Thanks for the video! Totally new to a smoker. Where do you have the temperature gauge inserted into the unit? I see the meat probe, but interested in where you have the digital temperature gauge
I run the cord through the bottom of the door close to the door hinge. This location works well for any smoker because it allows you to open the door freely and if there is a seal that gets damaged it should not affect smoker performance.

Is it really worth having charcoal ash all over your clothes? You were enveloped in a cloud of dust. So now you have to strip outside and wash your clothes - or go into the house and spread charcoal dust all around.

I never soak wood chips or chunks, I want smoke not steam. Also, most smoker manuals tell you not to do so, especially electric smokers... Sometimes I will load wood chunks because they burn slower. I like to put a small amount of wood chips in the tray then place a few chunks on top.
I just bought this smoker and i think I'll be making this modification. The reviews were bad so I hope it lasts. Smoked cheese is awesome
Hit and Miss! I am not recommending this smoker for beginners. The flavor was great but you had to set it up perfectly, but you can not low the temperature, and your cook time is limited. I did a brisket in this smoker and transferred it to a pellet smoker for the last 4 hours, it tasted great. It is currently not working, I think I got the controller wet and I am not willing to spend the money for new electronics...
What is a PID?
It is a high end temperature controller. They are commonly used by home brewers to make beer and is all kind of high end professional equipment. Adding one to an elecrtic smoker can give you more accurate temperature control.

For electric I give top marks to the Masterbuilt 140b, it is the most versatile but is limited to 270 degrees. What do you plan on cooking the most?

I’m doing one of these for Xmas. You didn’t let it rest, is there a reason for that? This is my first time with a chuck roast.
Please rest it! I am always running short on time fighting daylight for videos so many time I will rest too short or skip it. Also, the higher the cooking temperature the more importand the rest is, you want the temperature to even out in your meat.

I recently purchased this smoker. The analog thermometer matched my probe up to about 325, after it was probably 10 degrees over actual. I cold smoked cheese a week and a half ago..first time running it. Outside temp was 38. Inside temp with probe got as high as 80. I was using a smoke tube. The cheese ran about 2.5 hrs. What I noticed about this smoker was there really isn't a good venting of the smoke. During my cheese run I had the door propped open. I recently installed a vent on the lower left of the door, and one one the top of opposite side in rear. Am going to run chicken wings so, I'll check back and give you my results. I do have a question, regarding the smoke pellets. I purchased KONA brand, do you have any input on this brand? Thanks for your channel, am really getting into this.
I have not used KONA but I will look into it. I was thinking of adding vents, but on the sides. I was thinking bottom right and upper left to encourage good air flow, it might even out the temperature
I got this smoker and seasoned it. I previously used an Old Smokey Electric smoker for 10 years, but the bottom rusted out. The Old Smokey had a deep bowl to catch all of the fat, and it would usually be pretty full after smoking something like pork shoulder. Where does all of the grease go with this smoker? It seems like it could fall on the heating element and start a fire. Do I need to put some kind of deep tray on the rack under the meat to catch all of the fat?
Good call. I always put a disposable foil tray on the bottom shelf to to make cleanup easy. When I did that with this smoker I was having temperature issues... I think adding vents will solve this.
If your tying to use it for the sole purpose of holding brisket at 150 or so overnight then do you have to use and wood chips or pellets or can it operate without the smoke like an oven?
it can run like an oven... The controller holds the temperature you set. I have used it many time to hold food, like chicken thighs for a large party. I grilled the chicken over lump charcoal then put it in the smoker for four hours. I had to cook 3 batches, and I set the temp to 160.

Does the heat sink get hot enough to require a cooling fan? I'll be running a Masterbuilt 40" smoker.
I did not install a fan and it is working great. I also used it on the Cuisinart and it worked well.

It could be bitter, go with less smoke. I like heavy smoke and I did christmas cheese 3 days ago. Good luck!
