Bacon Shrimp and Corn Chowder
Today, we're whipping up something truly comforting and absolutely delicious - a creamy Bacon, Shrimp, and Corn Chowder! This hearty soup is packed with smoky bacon, succulent shrimp, and sweet corn, making it perfect for chilly days or when you’re craving something cozy. Stick around, and I’ll show you how to make this easy and satisfying recipe step by step. Let’s get cooking!
Bacon Shrimp and Corn Chowder Soup
Ingredients
6 slices of bacon, chopped
1 lb large shrimp, peeled and deveined
2 tbsp unsalted butter
1 medium onion, diced
2 celery stalks, diced
2 cloves garlic, minced
2 cups fresh or frozen corn kernels
3 cups chicken broth
1 cup heavy cream
1 cup whole milk
3 medium Yukon Gold or russet potatoes, diced
1 tsp smoked paprika
½ tsp cayenne pepper (optional, for heat)
Salt and pepper to taste
2 green onions, sliced (for garnish)
Instructions
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a plate lined with paper towels. Leave about 2 tbsp of bacon drippings in the pot.
Season the shrimp with a pinch of salt, pepper, and paprika.
Add the shrimp to the pot with the bacon drippings and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp and set aside.
Add the butter to the pot. Once melted, sauté the onion and celery until softened (about 5 minutes). Add the garlic and cook for an additional minute.
Stir in the chicken broth, diced potatoes, and corn. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 10-15 minutes, or until the potatoes are tender.
For a creamier texture, use an immersion blender to partially blend the soup. If you don’t have one, blend about 1-2 cups of the soup in a blender, then return it to the pot.
Stir in the heavy cream and milk. Add the cooked bacon and shrimp back into the pot, reserving a bit of each for garnish.
Season with smoked paprika, cayenne (if using), salt, and pepper to taste. Simmer for 5 minutes to warm everything through.
Ladle the chowder into bowls and garnish with reserved bacon, shrimp, and green onions. Serve with crusty bread or oyster crackers.

I make 3 bean salad a lot so I was happy to discover your 5 bean one 😊. Since I have a diabetic in the family I wanted to share this with others who have to delete sugar from their diets. I basically make the same marinade the only difference is that I replace the sugar with the same amount of Splenda sugar substitute. I have served the sugar free version to many , everyone loved it and no one knew about the Splenda substitute 😊
Thank you for letting me know, I love this salad so much and now finding out I am a diabetic I cannot have the sugar. I wanted to try with the Splenda but was afraid I would ruin it. Now I know I can have it again. Thanks so much for sharing, greatly appreciate it.
@MommaNeedsAGoal I'm so glad this tip helped you because I am a 3 bean salad addict and could eat the whole thing myself lol 😆. I found a TH-cam video several years ago that used Splenda in a 3 beaner and I've used it ever since. My marinade re I've is basically the same as yours so just substitute the sugar with equal amounts of Splenda ot the Walmart brand of it. I also used it in a broccoli 🥦 salad at a Christmas get together this, year and everyone raved about it so go for it girl 👧 and go make you a big bowl 🥣 of 5 beaners, yaaaay!

Unless hubby sees you making it. He hates cauliflower but I talked him into trying it and trust me it was like fighting with a little kid. He had a dime size on the spoon as soon as it hit his lip he started making a face. It was so in his head. ugh. I don't like cauliflower but this was delicious.

I went to Aldi yesterday, shopping haul video coming out on Saturday. Spoiler alert, I got the metal storage baskets for my potatoes and onions. Weather has been crazy here, schools have been closed 3 days this week which for me is not great as I have now been off work for a total of 3 weeks because of the holidays which means no pay for me. ugh.
