Kanda Bachali curry, a traditional Andhra delicacy, is a flavorful dish made with kanda (yam) and bachali kura (Malabar spinach). Here’s a simple recipe to make this nutritious curry.
Ingredients:
• 250 grams yam (kanda), cubed
• 1 bunch Malabar spinach (bachali kura), chopped
• 1 medium onion, chopped
• 1 medium tomato, chopped
• 2-3 green chilies, slit
• 1/2 teaspoon mustard seeds
• 1/2 teaspoon cumin seeds
• 1/4 teaspoon turmeric powder
• 1 teaspoon red chili powder
• 1 tablespoon tamarind pulp (optional)
• Salt to taste
• Oil for cooking
Preparation:
1. Prepare the yam: Peel and cut the yam into small cubes. Boil the yam pieces with a little salt until tender, then drain and set aside.
2. Cook the spinach: In a pan, add the chopped bachali kura with a little water. Cook until it’s softened, then keep it aside.
3. Tempering: In another pan, heat some oil. Add mustard seeds and cumin seeds. Once they splutter, add the green chilies and chopped onion. Saute until the onions turn golden brown.
4. Cook the tomatoes: Add the chopped tomato and cook until it becomes soft and mushy.
5. Add spices: Mix in the turmeric powder, red chili powder, and salt. Stir well.
6. Combine ingredients: Add the cooked yam and bachali kura. Stir to combine all ingredients, and let it cook for a few more minutes.
7. Tamarind pulp: If you prefer a tangy flavor, add tamarind pulp and cook for an additional 5 minutes.
8. Serve: Garnish with coriander leaves if desired. Serve hot with rice or rotis.
