Gluten free English muffins Ingredients: Preferment: • 1 1/2 cups plus 4 teaspoons (190g) all-purpose flour • 3/4 teaspoon instant yeast • 1/2 cup plus 3 tablespoons (152g) lukewarm milk (90°F) • 1/4 cup plus 3 tablespoons (102g) lukewarm water (90°F) Dough: • 1 cup (120g) all-purpose flour • 1 teaspoon (6g) salt • 1 teaspoon (4g) sugar • 1 tablespoon plus 1 teaspoon (18g) melted butter • 2-3 tablespoons (20g-30g) cornmeal for dusting Instructions: 1. Preferment: Whisk together the flour, yeast, milk, and water. The mixture should resemble thick pancake batter. Cover and let it rise at room temperature for 1-4 hours until bubbly. 2. Mix Dough: Add the remaining flour, salt, sugar, and butter to the preferment, forming a soft dough. Mix until tacky, using a wet hand if needed. 3. First Rise: Let the dough rest for an hour in a warm spot, then perform a bowl fold by stretching and folding. Flip the dough and let it rise again for an hour. 4. Shape and Rest: Gently flatten dough on a cornmeal-dusted surface, cut rounds, and place them on a parchment-lined sheet. Cover and rest for 20-30 minutes. 5. Cook: Heat a cast iron skillet or griddle to medium-low (about 350°F). Cook muffins until golden, about 10-15 minutes per side. 6. Cool and Serve: Cool on a wire rack, fork-split, and toast to enjoy those classic nooks and crannies.

@shawnrutkabenoit I'm going to try your Soup blend too haha I haven't stopped thinking about it! I basically make ours like a pumpkin soup. Crack and saute the aromatics in a bit of oil with the onion, garlic bacon. Add potato and broccoli, just cover with water. Cook, then bar mix the lot! Add a dollop of cream when serving. Cauliflower is a wonderful substitute for the broccoli. I add a chilly or a bit of Cayenne.. Yum.. 😊
