Today, I'm excited to share with you a simple and flavorful recipe for vegetable pulav that's perfect for a quick and easy lunch or dinner. The best part? It's incredibly easy to make at home, and I'll show you just how to do it.

Next, we'll add in the minced garlic and ginger, cooking for another minute until fragrant.
Now that our aromatics are cooked, it's time to add in the mixed vegetables. I'm using a combination of carrots, potatoes, and beans, but feel free to customize with your favorite veggies. Then add mint leaves, coriander leaves and all spices. Let them cook for about 5 minutes, or until they're tender but still crisp. While the veggies are cooking, let's prepare our spice blend. In a small bowl, combine the garam masala, cumin, coriander, turmeric, and salt. This blend is the key to giving our pulav its incredible flavor, so don't skip it!
Once our veggies are cooked, it's time to add in the rice and spice blend. Stir everything together, then add in some water and bring the mixture to a boil. Reduce the heat to low, close the Cooker, and let it simmer for about 15-20 minutes, or until the water is absorbed and the rice is cooked.
