Congrats on the bike brother.Make sure that those cam chain tensioner have been changed out. This is a 2000, look into switching to a carb. That early FI MM is in my opinion is a POS... I always Chub up when I see FishTails installed...

Im about to change my clutch, 2015, never done a clutch before, do you need to replace the steel plates or just the fiber plates? Did you use a n ew gasket?
You can change them i change mines every other time i change my clutches. If they have a lot of wear or black i would change them
