This helped. One suggestion - I got a CDL maple cream machine and found that I can just lean the pot of taffy against the spout and it pours in without scooping - drops straight to the bottom of the funnel. That starts with a cleaner operation and can be done by one person. It also had less waste higher on the funnel.
So excited about this. I have been making meals out of various things and wondered if you would ever do something like this. I too would love to see this become a series. Thank you so much. Gonna have to copy that puff pastry thing. 😅

Both Lapiere and dominion and Grimm make good machines. The one I use as a lapiere and I purchased it from great Dale Forrester at Lakes maple supply.
9 quarts of syrup make 8 quarts of taffy. does that make 8 quarts of maple cream or does it expand at all with the crystallization?

What machine are you using? Is it possible to use an industrial dough mixer using a paddle implement?
