Famous for its Biryani, Hyderabadi cuisine has a rich platter of foods of diverse origins. Hyderabad State, ruled by the Nizams was the largest state of India. Besides Telangana, it covered several districts of Maharashtra, Karnataka and Rayalseema region of Andhra Pradesh. Besides, the tangy telugu recipes and Moghlai with distinct local touch, recipes from Karnataka and Maharashtra are integral part of Hyderabadi cuisine. The business community of Hyderabad was dominantly Gujarati and Marwari. The Indian Railways contributed to this diversity by bringing in a large numbers of Tamils. The presence of the British resident added a small population of Anglo-Indians. Living in harmony, each of these communities added their flavours to the Hyderabadi platter. An elderly couple, Shalini and Ajit, who have deep roots in Hyderabad and and its culture, have taken up the onus of bringing to life the diverse cuisine and aptly named the channel SHALUS " HYDERABADI PAKWAN".
NAVRATAN CHATNI | Navratan Chutney Recipe In Telugu
RECIPE
INGREDIENTS
100 gms. dry dates, deseeded 100 gms. raisins
11/2 tbs. ginger 1 1/2 tbs. garlic
1 1/2 tbs. amchoor 80 gms. fresh mint leaves, stems removed
1 1/2 tbs. chilli powder 1 tbs. sugar
1 1/2 cup vinegar, sufficient to soak the dates, raisins & mint leaves
Salt to taste
METHOD
Soak the dates, raisins and mint in vinegar, overnight. Mix all the ingredients and grind to a smooth paste. The quantity of salt ,sugar and chilli may be changed to suit individual tastes. Store in a glass jar.
NUTRITION
* Dates and raisins are rich in sucrose and minerals. Besides vitamins and minerals, mint is very good for the stomach. Ginger is a common home remedy for colds and coughs. Garlic reduces Cholesterol.

Where is the Pathar ka pool???
we don't add pathar ka phool. Hyderabad recipes have specific ingredients for specific masalas. Bojwar masala is used in sour dishes where either tomato puree or tamarind are added.
