Cheese Tortellini
Hello to all our Fox Hallow Fam. This week Dave and Todd are pulling double duty in the kitchen as they show you a quick and easy cheese tortellini recipe. Top it with your favorite sauce and you are ready for a great meal. So if you are ready then lets have some fun.
Cheese Tortellini
Dough:
4 lg eggs
1 Tbsp water
3½ cups flour
½ tsp salt
Filling:
8 oz ricotta, drained
1 lg egg
½ cup grated parmesan cheese
½ tsp basil
2 tsp parsley flakes
⅛ tsp black pepper
pinch of nutmeg
Egg wash:
1 lg egg
Dough:
• Place all ingredients in the bowl of a stand mixer with the dough hook attachment. Knead for 2-3 minutes on low speed.
• Remove from the bowl and knead by hand for a few more minutes.
• Cover with plastic wrap and let rest for 15-30 minutes.
Filling:
• Dry the ricotta by squeezing between paper towels. Add all ingredients to the bowl of a stand mixer and mix with the paddle attachment until combined. Set aside.
Pasta:
• Divide the dough into 4 pieces. Keep the pieces wrapped in plastic so they don’t dry out.
• Using a pasta roller or rolling pin, roll out one of the quarters very thin. Cut with a 2” circle cutter or drinking glass.
Assembly:
• Lay out the rounds on a work surface. Place about ¼ tsp of the filling in the center of each.
• On one round at a time, brush half of the edge closest to you with the egg wash and fold the circle away from you over the filling for make a half circle.
• Bring the two corners together and stick them together with the egg wash.
• On a parchment lined baking sheet, arrange tortellini so that they are not touching. Freeze for 1 hour.
• Once the tortellini are frozen you can use them right away or place in freezer bags for later.
• To cook, place in a pot of boiling water for 5-7 minutes, until they float to the top. Serve with your favorite sauce.

Cheese Tortellini
Dough:

This is a great recipe. I literally use all the ingredients listed for my french toast on my upcoming menu at work. For a good reason . This is full of flavor. I add orange and lemon zest, and roll them in brown sugar and cinnamon. Served with a blueberry and cream cheese sauce and topped with homemade whipped cream. Give it a try!

I've worked in a lot of kitchens . Some we made homemade dough, some store bought , now the way Ive always done this pizza was : dough, mix shredded cheddar and mozz, bacon, more cheese .... Oven. Straight outta that oven I'd let 'er rest a moment, shredded lettuce, diced tomato , and mayo on top out of a sauce bottle with a super precise tip, the drizzle I always thought was so appealing .. absolutely phenomenal. .. I've yet to try using the mayo as an actual base sauce, I will have to give it a whirl one of these days.... Or even a garlic aoli type thing would be delicious. 👍
