Just water. A light spritz of water reduces static so all the grounds fall from the grinder.

Nice video but that is too much salt. I have been experimenting with 25 to 35 grains of table salt into 35 ml of brewed espresso in order to cut bitterness. A whole pinch of salt will make the coffee taste too salty.
