Eat Simple Food - Recipes, Cooking Advice, Tips
www.eatsimplefood.com
Hi! I’m Beckie Hemmerling. I love food and glorify it sometimes but also think of it on a basic level of providing strength & nourishment. Cooking has helped me *try* to figure out life, not just my own, but also other peoples. I have cooked through many joys / sorrows and cooking has always been a meditative place through these highs & lows. As a professional cook, I have been a “food therapist” to each one of my clients.
In 2005, my husband and I went on a cleanse & cleaned up our eating habits. We started an organic healthy meal preparation company called The Organic Dish in Boulder, CO, and sold it in March 2012 to move to lovely Charleston, SC.
I started Eat Simple Food in 2012 to re-spark my interest in & understand food at a more basic level, to refine techniques for the home cook, and to be an advocate for clean, healthy, and organic food.

Easy Tomato Bisque / Soup Recipe - EatSimpleFood.com
• Recipe: eatsimplefood.com/tomato-bisque/
This simple and easy tomato bisque soup recipe is creamy, fast, affordable and delicious.
The ingredients for this easy tomato bisque recipe are so simple that you might think it's too good to be true but, it's one of my favorite recipes!
There are only 5 ingredients in this easy tomato soup recipe: butter, salt, can of whole tomatoes, heavy whipping cream, and onions.
Serves 6
Ingredients:
• 3 Tbsp unsalted butter
• 1 cup (~ 1 small) onion, diced
• 56 ounces (2 cans) WHOLE canned Tomatoes with juices
• ⅔ cup heavy whipping cream
• 1 tsp salt
Instructions:
• Bring a pot to medium high heat and add butter and onions.
• Reduce heat to medium low and cook covered until onions are soft and translucent (not brown or caramelized) ~ 7 minutes.
• Add whole canned tomatoes with juices and salt.
• Bring to a boil, reduce heat, and simmer covered ~ 30 minutes.
• Remove from heat and Immersion blend (you can also food process or put it in the blender).
• Mix in heavy cream. Rewarm soup on low if needed.
• Add salt to taste. Add cream to taste if you want it richer and more velvety.
What To Eat With Easy Tomato Soup / Bisque
This easy tomato bisque recipe would go great with a grilled cheese sandwich. Other ideas are:
• Buttery Toast
• Add a little macaroni (shout out to my mom)
• Serve it over a heaping bowl of spaghetti with some Parmesan or other cheese
• Favorite green salad to make it a wee healthier.
• A side of peas to make for an easy and fast dinner with some added veggies.
• Comfort food to the max and a staple soup in our house. Add a little fresh basil to this creamy tomato bisque if you've got it.
What is the difference between bisque and soup?
Bisque is a traditional French soup made out of shellfish (crab, lobster, shrimp). It also incorporates heavy cream. Nowadays, bisque is any smooth cream based soup.
Soup is generally made with a broth base, instead of heavy whipping cream. So tomato soup would be less creamy and less thick.
Dairy and Non Dairy Alternatives for Simple Tomato Bisque:
Why is heavy whipping cream used instead of milk or half and half in soups or bisques? It's because the fat content is so high that it prevents the bisque from curdling when cooking. It also freezes and defrosts better.
In a pinch, use a lighter dairy alternative for this easy tomato bisque recipe. It will not be as rich, and it may separate/curdle when cooking but it will still be good.
TIP: Vegans can use soy or coconut creamer instead of heavy whipping cream and a non-dairy substitute instead of butter for tomato bisque.
Easy Tomato Bisque Soup Recipe FAQS:
What makes a creamy tomato bisque?
Bisque is traditionally a thick creamy seafood soup. In general, bisque is thicker and is also made with a milk product. Heavy whipping cream does two things: makes all bisque / soup thicker and also makes it creamy and silky.
Why did my tomato bisque separate / curdle?
Mostly the reason would be that milk or light cream was used instead of heavy whipping cream. The lower the fat content = the higher the possibilities of milk curdling, so use heavy whipping cream. But also, it could be because the heat was too high when adding the cream. Try lowering or removing the tomato soup from the heat and then stirring in the cream.
How can I make canned tomato bisque better?
First, just make it yourself with this super easy tomato bisque recipe! Try adding heavy whipping cream to a canned tomato bisque if it doesn't taste good as is.

Good Day Beckie. Perfect for those Winter ☃️ months ahead. Have a Blessed and Beautiful Day ✝️
Hello Eddie - wishing you a beautiful day too :)
Love a good simple and quick recipe ❤️
Hi Bree - thank you for the comment! - Beckie
That's the first is a little snack for me I need 1 more of those so how much do I need at grocery store😮? Bag or?
Hi DannyRay! - the recipe is written for 1 pound which fit nicely (not overcrowded) in a 12" skillet. That might be a serving size of 3 if you have 5 oz each. Otherwise, grab 2 pounds - easy to make and eat!
@EatSimpleFoods ok will do i need 2 😁
This is a life saver!! We planted figs two years ago and this was the first year they produced. And HOLY MOL:Y did they produce!! So glad I found your recipe!!!
Figs don't joke around once they get established. We had so many this year - even the neighbors didn't want anymore, haha. Thanks for the comment Patti!
We had a shrimp peeler like that when I was a kid!
It's the little things that bring back the big memories!
Thank you. Easy and delicious. I will try it this evening. 🙏🏻
Thank you @Heavens3 - let me know how it turns out. - Beckie
@@EatSimpleFoods I made it. Tasteful. So yummy 😋 I will keep making it. Tasty and healthy😊
@@Heavens3 Thank you for letting me know Heaven!
I am both happy and a bit sad after watching this and another 6 of your videos. The happy is because I found a great YT page. The sad is because after looking at your webpage, I see where we both lived in Boulder and Nashville, and my wife was in upper management at an organic grocer corporate headquarters in Boulder after managing one of its stores in Nashville. Too bad, we never met you (or maybe we did?) Boulder was great because you could find organic establishments to eat healthy when you didn't feel like cooking. Healthy in Nashville means the proportion size is big enough to feed Jethro Bodine. Nashville eatery recipes start with enough partially-hydrogenated oil to harden the inside of a fire hose.
Thank you for this comment! Our paths must have crossed? We owned the organic dish in Boulder 2006-2012 and then sold it. It stayed open for another couple years. I was in Nashville 1994 - 2002 and worked at red hot and blue and a kobe steak house. I loved Nashville, although your description of the food is quite accurate, lol. We love Boulder restaurants! Charleston is also a unique food scene but we eat at home quite a bit because it's so darn pricey!
We had to have met. I had an office in the Park View Towers and passed by Kobe every morning and afternoon. We were in Boulder and left before you moved there.
@@sabertoothbaseball3432 loved Kobe. Centennial park and Elliston place where formative places and years for me. Still think of Nashville so fondly!
If someone is on a sodium-restricted diet as well as a lower fat diet, boneless and skinless thighs are a go-to protein. As a substitute for salt and pepper, try salt-free smoked chipotle seasoning. It makes thighs burst with extra flavor. These thighs, a Japanese sweet potato, broccoli or kale, and either beets or zucchini make up many of our dinners. Your video made my gastric juices start to flow; that's never happened in any other cooking video.
Hi @wi54725 - yes - totally agree that thighs are a go to. Your seasoniing suggestion and side dishes sound amazing. Thank you - I love to hear that this video had that effect!
Thank you!!! This is the type of process I was looking for. Simple, and easy. So many I've found seem to be more complicated. I'm going to do this but also turn the cores into vinegar, I think.
Thanks for the comment Anna - I love what you're putting down using the cores for vinegar! - Beckie
@@EatSimpleFoods Thanks!
Way to edited my girl.
Thank you @alistairkeppler2225 :)
Good Day Beckie 🐑. MMM MMM MMM, I'm a big fan of lamb. You must be too, even I couldn't eat 6 chops. I made a couple of boneless butterflied legs of lamb for a 4th of July party this year. Seasoned with a puree of, roasted garlic, sun dried tomatoes and fennel seeds that I rehydrated in water over night. When you soak the seeds they soften up and can be pureed smooth. I also added some Sicilian oregano and salt. I used a little olive 🫒 oil to help with the puree. Rubbed it all over the legs and let it marinate for 3 days. We cooked them over an open wood fire in a cage type gadget that clips closed. SOOOOOO good. The open flame 🔥 added a great flavor. Have a Blessed and Beautiful Day ✝️📖🕊️🥀
That sounds amazing Eddie. Love that you soaked and blended the fennel seeds. I never got into cooking over open fire but sure like to eat everything :)
@@EatSimpleFoods Hi again. Open flame is easy. My friend has a pit in his backyard made out of cinder blocks with a high and low spot. We put them on the high side first and once the juices started flowing and temperature hit 130* we put it on the lower side and chared it up a little. I recommend trying the soaked fennel seeds for baking too. Excellent for making Biscotti. I love the taste but hate biting into a hard seed, especially in Italian sausage. Try the marinade mix in some ground lamb. It makes a great burger. Have a Blessed and Beautiful Day ✝️🥀🐑
@@edward2448 thank you!
some feel they can eat this every day for breakfast, lunch and dinner and everyone else is a fool. and it is a huge pile of thighs by the way... not sure how many but maybe 90 a day. 🙃
not sure I understand flippingnina but thank you for the comment.
May i ask. How long will this be preserved for if kept in the fridge? Thanks.
Mostly, for as long as any jar of opened jam or jelly would last in the fridge for anyone. For us at at least 3 months but maybe even longer. Thank you for the comment @musaadfelton3909 - Beckie
@@EatSimpleFoods awesome. Thank you for the response
Now i cannot wait for my fig trees to start growing figs
They are so versatile and delicious @musaadfelton
@@EatSimpleFoods I absolutely love figs. Today I saw a tree with huge Mulberries on them😄😱 oh my word. Tomorrow I'm going there to get a cutting from that tree.
@@musaadfelton3909 my grandma had a mulberry tree. We ate the heck out of them growing up
@@EatSimpleFoods lol I actually went to go get a cutting from that tree I saw. The berries are amazing. Huge, sweet. My hands was stained a bit lol and my daughters mouth was purple🤣🤣 I love these fruit that you can't really buy in store. It's nostalgic because like you said. It reminds me of the surrounding neighborhoods including mine, that had all of these trees, mulberry, figs, bush Cherries, loquats, Pomegranates. When I was playing with friends and we would leave home with our bicycles then we won't be home until Sundown. Lol we would then get these fruits from peoples trees. So it's something I never forgot and now I'm growing all of those trees. I haven't really gotten fruit from any of them yet beside from one mulberry tree I have but they were small berries. So I can't wait until the rest of my trees start producing these amazing nostalgic fruits. My daughter is already getting the feel for it and she loves these trees.
@@musaadfelton3909 I love that - it's so fun to grow fruit trees and shrubs. Those stained mulberry hands and mouth memories last forever! Your doing the work now to get the fruit later!

@@EatSimpleFoods great!
Good Day Beckie. Thank you for not ditching the stems, full of vitamins and fiber. Although it did give me a flashback to when I worked in a French restaurant. I had to peel the stems then cut them into bite size pieces and shape them to look like a 7 sided football. Same with potatoes and carrots. All just for one dish. Sweetbreads in a brandied plum sauce. Looked really nice but Oiy the labor. Have a Blessed and Beautiful Day ✝️📖✌️💞🙏🕊️🐑🥀
Hello Eddie! I love the stems but do appreciate when someone takes the time to peel them and make them into 7 sided footballs, haha. I feel like that's why those places cost so much money - the visual presentation, texture, taste and feel, and all that work! My my. I do not miss that!
@@EatSimpleFoods Good Day Beckie 🌄. Having to do that did teach me that it's at first a visual presentation. But it seemed like a lot of work to go through for Sweetbreads 🤮. When I was working as a Chef I stressed presentation. I was a little OCD. I put out every dish as if it was going to be photographed. I took my job seriously. I miss the creativity but not the prep and clean up after a 10 hour shift. I always stayed and helped clean up. Now I have to go make a mess in my kitchen and clean up a chicken. I better stop now, I could yap all day. Have a Blessed and Beautiful Day ✝️
@@edward2448 I owned a commercial kitchen with a storefront, delivery, and shipping nationwide and have also been a personal chef for 10 years. @@EatSimpleFoods Hi Beckie. I would still be doing it if not for this @#$&? Arthritis. I believe that the long days on my feet wrecked my knees 🦵😫. The tubers need to he cured before eating to lessen the inulin effect on your digestive system. Just put them in a window ledge for a week prior to cooking.
Storing them for longer times also helps, but other ways of preparing them to reduce or break down inulin include boiling them in an acid like vinegar or lemon juice or cooking them twice (boiling and roasting). Thanks @imansaad8018!

P. S. , you chop your ingredients faster than anyone I've ever seen 🤭
hehehehehehehe :)
Good Day Beckie. For me I use granulated onion. I don't like raw. I do like the addition of a hint of tarragon, never Dill. I usually put my extras in the food processor and kinda make it slightly smooth. I like it in a hollowed out cucumber like a boat or rolled in a leaf of lettuce. Here in Amish Land they add hard boiled eggs to almost every deli salad. Good on a cracker or croissant 🥐. Have a Blessed and Beautiful Day ✝️🕊️✌️
Hi Eddie! Tarragon sounds lovely! And chicken salad sounds perfect in a hollowed out cucumber or a lettuce wrap. YUM - croissant for the win! Have a good one!

Could one use honey instead of sugar?
Hi Teddy boy. Yes! Honey is a little sweeter than sugar, so I would start off with 25-30% less honey. Then add honey to taste. You may also need to cook it a little longer and/or start out with ½ cup water instead of 1 cup since honey is liquid. Thanks - Beckie
Great job

Good Day Beckie. Nice side dish, hot or cold. Lots of corn 🌽 here in Amish Land right now 👍. Have a Blessed and Beautiful Day ✝️
Morning Eddie. I serve it cold (cause it's easier and I like fresh cherry tomatoes), but hot would be good too. Wishing you a great day!
@@EatSimpleFoods Hope you have some good Pumpkin, Acorn and Butternut squash recipes. When they harvest around here there is an Abundance. Super cheap. I still have Acorn squash puree from last year in my freezer. Got them for .25c each. I like adding it to my Stone ground oats with a splash of maple 🍁 syrup 🤤😋. ✝️✌️🕊️
@@edward2448 that sounds like a delicious, affordable, and healthy breakfast Eddie. I have several delicata, acorn, and butternut squash recipes but not pumpkin. I will put it on the list!
@@EatSimpleFoods I'm lucky to have a few Amish and Mennonite markets near me. Very basic store and they buy bulk and close-out items. I save at least 40% over chain store markets and Walmart. That combo also makes a nice baked oats. I like it with apple 🍏🍎 too. They have a minimum of 5 varieties always. I like a butternut squash pie 🥧 over pumpkin for thanksgiving too. Have a Blessed and Beautiful Day ✝️
@@edward2448 Thank you!
This looks delicious!!! Thank you, Friend 😊
Thank you Karine - happy fall!
Thank you, you as well 😊@EatSimpleFoods
a question if i cook the large broad beans with the shell is it safe is it not forbidden to eat ?
Hi @shirasezan - You can eat the shell as well, especially if it's tender and young. It's really just personal preference. Thank you for the question. - Beckie
@@EatSimpleFoods thank you
Ok so I just made this for my husband with chicken and asparagus. I cut them a bit differently, but otherwise did as you said. He couldnt believe that salt and pepper were the only spices I used. He said they were perfect. I love simple recipes and this one is a hit! I subscribed.
Hi Melissa, Thank you for trying the recipe, subscribing, and taking the time to leave a comment. Salt and pepper go a long way on a good ingredient! Best! Beckie
I have so many figs and this is amazing Literally the best jam I've ever had so easy so simple so good
Love hearing it phreakout93 - thank you for letting me know and leaving a comment - Beckie
And I not supposed to stir it when it's unmasked sitting for the 20 minutes? I really want to stir it because it makes my brain feel good
Yes stir it and make your brain feel good @thexwhats2989!
Good can't wait to try it today
Wow I love it Although I did use less figs because I had less and smaller I did use the same amount of lemons and used the amount of sugar I wanted and it turned out amazing
@@thexwhats2989 I just saw this comment - thank you for letting me know @thexwhats2989 ! - Beckie
I sure hope this recipe goes good with goat cheese
Goat cheese is the perfect ingredient to go with figs. Thanks for the comment Texwhats :)
This was SO simple I couldn't believe it!! I did tweak it a bit so I hope you're not upset lol! I didn't have liquid acid so I added a few drops of lemon juice and a DROP of EVOO, along with some salt a pepper to taste. That was it though! It turned out amazing so thank you! And thank you for your cheery spunk while filming and presenting this, I totally enjoyed you and am now following you!!! Can't wait to try some more of your recipes! Thank you SO much!!!
Thank you for the comment Schroonman and for letting me know what you added - sounds delicious! I don't get mad, I get even. Just joking. I don't get mad or even :). Thanks for the follow! - Beckie
@@EatSimpleFoods Btw, I’m not kidding you, I have been LITERALLY eating this every day because it is SO good and SO super simple to make!!! ❤️😋😃
great recipe👌👌👌❤
Thank you!
Try using parchment instead of fool. Using foil there is a disaster waiting to happen. Also, leave the skins on gor much more flavor
Hi Tom - thanks for the comment. The recipe can be for peel on or off - it's also a texture thing. I like it both ways. Some parchment burns at temperatures over 425F so always good to double check. But another option would be too cook directly on the sheet pan. Cheers, Beckie
Good Day Beckie. I first thought you were going to make a Stirfry. Honestly I've never had raw zucchini. I'm sure that's a nice summer salad. For my taste I would like it stirfryed over some Lo Mein noodles. Zucchini is the best noodles for low carb diets 😊. Have a Blessed and Beautiful Day ✝️📖✌️💞🙏🕊️🐑🥀
Morning Eddie, that sounds delicious to mix them in with Lo Mein noodles. We sometimes mix them half and half with spaghetti if we're going for something lighter. I don't like to cook them because they get to soggy for me, but plenty of people do stirfry zucchini noodles. Thank you!
@@EatSimpleFoodsGood Day Beckie. I'm a big fan of zucchini. A simple cut up and simmered in marinara or even a Puntanesca sauce is fabulous. Those Zucchini Noodles would make a nice fried "Haystack" type side or garnish. Buttermilk bath and seasoned flour/cornstarch mix and flash fry. Not exactly the healthiest way but yummy. Pleasure chatting and exchanging ideas with you. Have a Blessed and Beautiful Day ✝️🕊️🐑
Our tree never had more than twenty figs until last year. Now we get a hundred. Needed a recipe, thanks
goodness, next year you may have a couple hundred! Thank you for taking the time to leave a comment Rono. - Beckie
Nice thank you, have some friends heading over soon and this will do nicely.
Thank you for the comment and for trying the recipe Kieran. - Beckie
I wouldn’t dare to use cabbage without washing it. The statement that it is difficult to handle so just peel off the bad leaves is ridiculous. Use your head!!! Cut the thing into quarters and wash it or go ahead and cut it up then wash it (Dummy).
You seem like a pleasant person and effective communicator Sandra. People can definitely use their heads and prepare food as they like. Happy cabbage washing!
Do you know how to make the perfect oven-baked chicken breasts? I found this recipe and it came out nearly perfect. Ingredients: Brown sugar, paprika, oregano, garlic powder, salt, and pepper, the secret ingredient in this is brown sugar: Rub spices all over, then add two tablespoons of olive oil directly to chicken breasts. Temp: 425 F for 16-18 minutes. Just place the chicken on a simple flat metal pan. No parchment paper. Do you have an even better, perfect simple oven-baked chicken recipe? Thanks.
I don't Charlie x 3, but will work on one. That sounds like a good combo and easy enough. Was the chicken breast juicy (thinking about your nearly perfect statement)? I might lower the temperature just a bit because there's not a lot of fat in chicken breast. Thank you!
@@EatSimpleFoods Dude, in hindsight, your observance of the lack of fat is spot on. Someone needs to come up with the PERFECT oven-baked chicken breast recipe. Something super simple. Thank you.
@@Charlie-Charlie-Charlie dude! Will put it on the list. I have a really basic pan fried chicken thigh recipe - studio.th-cam.com/users/video6k4-tW0s6UM/analytics/tab-overview/period-default
@@EatSimpleFoods Dude. Fan. Take care.
@@EatSimpleFoods I'll try lowering it next time. I just want the PERFECT easy oven-baked chicken breast. I want to eat it 2-3 days later and have it still maintain some sort of juiciness. Most people want fancy cars, homes, better-than-average teeth, and a pet monkey. Me? I just want the perfect oven-baked chicken breast. That's all I want from this life. And I'll be damned if I don't get it. This is making me so damn angry. I have to go. Thank you.
I agree with others regarding how long some videos are. Some people just love to hear themselves speak. JUST GET TO THE POINT. And now I will subscribe to this channel. Thank you.
Thank you for the comment and subscribing Charlie x 3. My goal in life is to get to the point, alas it doesn't always work!
awsome...........
Thank you Cody!
