This is an Italian classic that's as easy to make as it is delicious. It's the perfect weeknight dinner that you can make in under 30 minutes. Plus I'm going to show you the easiest way to separate egg yolks.

Recipe:
Ingredients:
1 4 oz. package of guanciale (10 slices of bacon will work too)
4 Cloves Garlic
8 Cups Water
1 Lb. Pasta of your choice ( I like spaghetti for this)
1 1/4 Cup grated Pecorino Romano Cheese (Parmesan is good too)
4 Egg Yolks
Salt & Pepper to taste
Parsley for garnish
Instructions:
1. Cook pasta to directions on the box making sure to set aside a couple cups of pasta water
2. In a large pan over medium heat, sauté the guanciale then add garlic
3. In a bowl, mix together the egg yolks and the grated cheese
4. Remove pan from the heat and add cooked, drained pasta
5. Add egg and cheese mixture to the pan
6. Slowly add pasta water into the pan with the other ingredients until you get the desired consistency of the sauce
7. Add salt and pepper to taste
8. Plate and top with more grated cheese and parsley
9. ENJOY!
