This is a channel to share my love of BBQ and recipes, tips, techniques, reviews & some of my experiences rebuilding pellet grills and gas grills that others have neglected or "left for dead".

I currently use Traeger, Green Mountain & Yoder pellet grills, as well as Weber Smokey Mountain smokers.
Am also a fan of my Blackstone flat top and Weber gas grill & Smoke Chief pellet-based cold smoke generator.

We spatchcocked an 11 pound turkey and injected with Tony Catchere's cajun butter seasoning. It was WONDERFUL. We cooked it on the Yoder pellet grill. This was simple and so easy. It was a terrific success. It was juicy, flavorful, and the skin was PERFECT.

Thank you Sir! I have an old Traeger model 075, from the early to mid 2000s. I upgraded it from the "Low - Med - Hi" original controller to the digital controller you removed for this video about 8-10 years ago. Recently I decided to upgrade again to the 2 probe controller you show here. I took the older controller out with some difficulty - a couple of those plugs acted like they were glued together. When the new controller arrived it absolutely would NOT fit in the hole on the Traeger despite assurances from Traeger sales and service. I did two real time zoom sessions with them and could not get the thing in there. So I sent it back. Since I didn't expect to have to reinstall the old controller I didn't take pics before disconnecting the leads (Doh! 🤦♂️). This video saved my bacon! The purple leads were the only ones clearly color-coded. So, thanks to you we're good-to-go for Thanksgiving in no time. BUT you got me thinking - somehow YOU are able to do this upgrade, why can't I? I think it just came to me - I should have put the faceplate of the controller through from the back - right? I bet that would work! There are 2 PCBs on the newest controller instead of one, and a wire protrudes on the right side while a component protrudes on the left side...these may not be an issue if the controller is pushed through from the back. DOH! again. Can you confirm this? If so I will order another new controller and try again. My only consolation is the Traeger support guy didn't think of that either. Thumbs up & subscribed! Hey John! Glad this helped you out. Couple of things to know when you upgrade these "classics" with the Smoke-Medium-High controller. I have restored a bunch of these. 1. New controllers are just a bit wider than the old. You need to widen out the opening just a bit. I use a grinder with a cutoff wheel. You need to shave about 1/16th inch off each side. If you take it all off one side, the mounting screws will be off. 2. New controllers use an RTD probe (thermocouple) to feed current interior temp info to the device. This tells the controller when to start the feed of pellets to hit the temp you set. You will have to drill to mount the RTD on the left side lip in the cook chamber and drill to run the wires out to connect with the controller. This video may help a bit. @bbqplus Wow! Thanks again. I was going to re-order the upgraded controller figuring I had flunked an IQ test and inserting it from behind would solve the issue. I don't own an angle grinder, with or without a cut off wheel, and I don't think my Dremel is up to the task. 🤔🤔🤔 Perhaps a good excuse to get one, but then I'm not sure I could cut a precise straight line - never took shop or worked with metal. I did compare the 2 controllers and I *thought* the face plates were the same size, but maybe I was wrong. I'll definitely check out your other videos, but not sure I'm up to make the Traeger my first metal work project. Would not want to botch it. I'll let you know if I do dig into it. Meanwhile just had our Thanksgiving turkey prepared on the Traeger. Kind regards, John

Rust reformer according to factory specifications "Do not apply to surfaces that exceed 200°F" therefore it is not suitable for grills (
Does any grill have A replaceable auger tube on my treager the end of the tube is burned up like the burn pot?
Unfortunately I have not found a source for these. You could bring the assembly to a local metal fabricator and have them fashion/attach a new tube. I would probably get a small sheet of thin metal from Lowes/Home Depot... bend around existing tube and fasten with hose clamps (or spot weld if you have those skills). Good luck!

Cheeks and tongue is used to make barbacoa. Throw it in a pressure cooker/slow cooker with onion, garlic, bay leaves and a good amount of salt then shred when its done. Put it on a tortilla and you'll fall in love.

The tallow helps keep the cheeks moist and flavorful. They were soooo tough when i trimmed them. Used my sharpest knife and had a hard time. Confit helps tenderize. I am planning another beef cheeks video to compare techniques... butcher paper wrap, confit, foil wrap and maybe foil boat.

My son in law said that this batch was the best ever!
Just came across this, going to try soon. One suggestion though... I see you lined the tray of the Camp Chef with Aluminum foil so I would suggest the same for the small trays. Cleaning cooked on sugar and/or BBQ sauce is no fun. Or maybe dollar store throw-aways.

The fuse is in-line from the controller to the power cord. Looks like a black tube on the red wire... it untwists to access the fuse..

I need to get a good pan like that, and just have it be dedicated to the smoker so I don't stress about stains. The disposable heavy foil pans just aren't as nice to use.
If one of these just "disappears" from the kitchen and you use it in the smoker a lot... it will never be allowed into the kitchen again :-) ...Or check a thrift store! Thanks for watching.

I have done a snake in my Weber Smokey Mountain bullet smoker. Cooked a pork shoulder and it turned out great. I want to do a brisket on the Kettle with a charcoal snake.

I just got a Loco Kettle Cart about a month ago and I really like it. The great flavor that you can get with charcoal and l like the BB Mesquite Lump coal gives 🥩 steaks a great flavor and with some chunks of wood. I great not using lighter fluid gives it a bad taste. I have always found brisket to be a bit daunting. It is also a VERY long cook. I think k perfecting brisket will be my focus coming up!

Agree! It's great to have around. On Saturday, I am doing smashburgers on the Blackstone for the family. I plan to brush the buns with melted tallow before toasting on the flat top!

Question, when I turn my Traeger on the auger keeps feeding pellets continuous. Would this be a controller issue?
@@mbuckingham that would be my guess. The auger motor runs when the controller sends power to it. Easy to replace.

Hello Jeff really like your new smokehouse. I have found those two seasonings at Walmart too. Kinder also makes a good steak seasoning. Those chicken holders are great. Yeah. It was raining the other day and I was nice and dry under cover! Planning on enclosing the "background" in my videos and also adding some folding sides for wind and weather protection. I plan to make a video of rhe build and a "tour" of the smokehouse..
