Obviously that's a bit more than the factory cam.....but that intermittent loping seems a bit exaggerated.......like it's not firing on all 8.....something that a check of the wiring as well as the timing would probably rectify.
Isn't that cam/lobe separation? You sound like you know your stuff. What's better with these cars, a stout small block like the LT1 w/low rear gears or a big block with high gears?
Handling-wise, you can't beat the weight distribution of a small block Stingray, especially when one can realize its full potential w/an LT1 under the bonnet, but then for high-speed motoring, there's no substitute for cubic inches.
