Sponge Cake Recipe (24cm):
► 6 eggs
► 210 grams of sugar { 1¼ cup }
► 195 grams flour (sifted) - { 1¾ cup }
► 30 grams of Milk - { 6 teaspoons}
► 60 grams of Oil - { ¼ cup }
► Half tsp. of Vanilla
1. In a mixing bowl add the eggs and sugar and mix well, then place the bowl over boiling water while whisking until the sugar dissolved.
2. Whip the egg mixture on high speed for 4 to 6 minutes until very thick (see video for correct thickness 01:40 ) Then whip on low for 1 minute to remove large air bubbles.
3. Sift the flour and fold until you don't see more flour. In a small bowl add the milk and oil with some of the batter and mix well before adding everything back in and fold until well incorporated.
4. Pour in a greased 24 cm baking pan and tap to remove air bubbles, Bake in a preheated (350) oven for 25 to 30 min.
Vanilla Mousse Recipe:
► 2 cups of Milk
► 1 tsp. of Vanilla
► 55 grams of Corn starch
► ½ cup of sugar
► 2 eggs
► 1½ tablespoon of Gelatin
► ¼ cup of water
► 2 cups of whipping cream
1. In a saucepan on medium heat add the milk and the vanilla, let this simmer.
2. In a bowl add the corn starch, sugar, and eggs, mix this well.
3. In another small bowl add the gelatin and water and let it bloom.
4. Now add some of the warm milk to the egg mixture and mix well to temper the eggs then return everything back and keep mixing until the custard thickens.
5. Once it has thickened, turn off the heat and add in the gelatin, mix well so it can dissolve well.
6. Let the custard reach room temperature, once it's room temp. whip 2 cups of whipping cream until it's very thick and fold them both together.
