Looking back at it, it's like in Yoshi's Island where all your eggs start off green, but change color depending on how many times they bounce off walls. After one bounce, they turn yellow, which yield coins once they hit an enemy. After two bounces, they turn red, which yield mini stars. The eggs disappear after bouncing 3 times. It wouldn't be until Yoshi's Story where the eggs match the color of your selected Yoshi.
