If you are going to cook with a banjo burner like that you have to first learn how to adjust the air flow to get a blue flame. That burner will cook a 30-50 gallon pot with ease, but it needs to be turned way down on that pot.
Jambalaya is my favorite Cajun/creole dish. I and my family like version a Lot. This version taught me a lot. I’m going to incorporate them next I have a hankering for jambalaya. My family will surely enjoy the update.

So what is true ratio of water or stock to lbs of rice?
Water to rice ratio is always the same 2:1. If 1cup rice then 2 cups liquid. If 20 cups of rice 40 cups of water etc etc

One more question. How does the amount of meat you are doing relate to the amount of rice you need to cook? I have gone to some people and it seems their ration meat to rice was very small?@@mearlwatson
For that 5 gallons pot I used a jambalaya calculator I found online. It was 3 lbs or eat type of meat. So for a regular size Dutch oven I use 1 lbs of each meat and I think two cups of rice. Maybe 3

This is the best 👌 recipe I have seen so far...I was given a cook book by my aunt with a Jambalaya recipe. I made it myself but yours looks mighty tasty. the bacon tops it and now I see you made good use of that bacon grease ... looks great 👍
