This lot is comprised of the Geisha variety, grown on the famous Elida Estate in Boquete, Panama. The coffee is processed on the estate using a special "Anaerobic Slow Dry" method.     Hi @domrod7. I've tried this recipe twice and I wasn't happy with the results. The resulting brew was weak and tea-like. Very little flavor. Slightly acidic. It tasted under-extracted to me. I followed the instructions very carefully using a washed Ethiopian coffee from the Konga District that was about 9 days off roast. The only thing I can think of to change is to grind finer. Any advice you can impart would be appreciated. I don't want to waste good coffee. Thanks!

      Hey Christopher thanks for the feedback! You're spot on with the idea of going finer. This recipe worked for a specific coffee of ours but grind size will always be changing depending on region and with Ethiopian coffees the seed density plays a huge part. My recommendation is keep the same parameters but fine up the grind slightly each time you make it. You'll likely find a sweet spot for this coffee that will give you a good idea of how your grinder is calibrated. Once the coffee taste right to you keep that grind number handy and use it as a starting point for other coffees. Happy Brewing! Dom

    I can not recreate this. My brew times are 4-5 minutes every time. And I’m grinding way coarser than most of my coffees. What does a “1 click below 6” on the ode look like? Anyone know how that compares on an Encore?

    Incredible, I can’t seem to get my brew time under 4min… Guess I’ll try even coarser or make sure my waters boiling on every pour

    How would you guys adjust the recipe for a smaller brew?

      Find you desired out weight in grams and divide that by 17 but keep the recipe the same

      For lighter roasts we tend to go as hot as possible, this case being 212F
