Ingredients for soaking:
Beef liver 1/2 kg
Vinegar 1/2 cup
Salt to taste
Ginger garlic paste 1 tbsp
Water as required
Ingredients for gravy:
Oil 2 tbsp
Onion (chopped) 1 cup
Tomato puree 1 cup
Yogurt 1 cup
Coriander powder 1 tsp
Ginger garlic paste 1 tbsp
Turmeric powder 1 tsp
Salt to taste
Red chili powder 1 tbsp
Cumin powder 1 tsp
Garam masala powder 1/4 tsp
Green chilies for garnish
Coriander fresh for garnish
Directions:
Take beef liver and cut into cube shape. In a bowl of water mix vinegar, salt and ginger garlic paste.
Add liver cubes in it and soak for 10 to 15 minutes. Then rinse it off with water and set aside.
Heat oil in a pan, add ginger garlic paste and sauté it for a minute. Add onion and cook until translucent.
Now add tomato puree, salt, turmeric, red chili powder and cook for 3 to 4 minutes or until oil separates.
Add soaked liver in it, mix well and cook on high flame for 5 to 6 minutes. Add water as required and cook until oil appears.
Lastly add yogurt, cumin powder, coriander powder, mix well and cook on low flame for 10 to 12 minutes.
Garnish it with green chilies, coriander and serve delicious beef kaleji.
Preparation time: 10-15 minutes
Cooking time: 25-30 minutes
Serving: 4-5 persons

بھگونے کے اجزاء:
بیف کلیجی آدھا کلو
سرکہ آدھا کپ
نمک حسبِ ذائقہ
ادرک لہسن پیسٹ 1کھانے کا چمچ
پانی حسبِ ضرورت
گریوی بنانے کے اجزاء:
کھانے کا تیل 2کھانے کے چمچ
پیاز 1کپ
پسے ہوئے ٹماٹر 1کپ
دہی 1کپ
دھنیا پاؤڈر 1چائے کا چمچ
ادرک لہسن پیسٹ 1کھانے کا چمچ
ہلدی پاؤڈر 1چائے کا چمچ
نمک حسبِ ذائقہ
لال مرچ پاؤڈر 1کھانے کا چمچ
ذیرہ پاؤڈر 1چائے کا چمچ
گر م مصالحہ پاؤڈر 1چوتھائی چائے کا چمچ
سبز مرچیں گارنش کے لئے
تازہ دھنیا گارنش کے لئے
ترکیب:
بیف کلیجی کو ٹکڑوں کو میں کاٹ لیں۔
اب ایک باؤل میں پانی، سرکہ، ادرک لہسن پیسٹ مکس کرکے اس میں کلیجی ڈال کر دس سے پندرہ منٹ بھگو دیں اور پھر پانی نچوڑ کر سائیڈ پر رکھ دیں۔
پھر ایک پین میں کھانے کا تیل گرم کرکے اس میں ادرک لہسن پیسٹ اور پیاز ڈال کر ایک منٹ بھون لیں۔
اب اس میں پسے ہوئے ٹماٹر،نمک، ہلدی اور لال مرچ پاؤڈر ڈال کر تین سے چار منٹ پکائیں۔
پھر اس میں بھگوئی ہوئی کلیجی ڈالیں اور اچھی طرح مکس کرکے تیز آنچ پر پانچ سے چھ منٹ پکائیں۔
اب اس میں حسبِ ضرورت پانی ڈال کر آئل علیحدہ ہونے تک پکائیں۔
پھر اس میں دہی، ذیرہ پاؤڈر اور دھنیا پاؤڈر ڈال کر اچھی طرح مکس کریں اور ہلکی آنچ پر دس سے بارہ منٹ پکائیں۔
اب اس پر سبز مرچیں اور دھنیے سے گارنش کرکے سرو کریں۔
تیاری کا وقت: 10-15منٹ
پکانے کا وقت: 25-30منٹ
