Black Rockfish Spear, Brain, Gill: Raw Clip

This is the best way I've found to keep rockfish fillets a pristine white, specifically after shooting through the meat. First knife the fish in the brain, then gill/cut the apex of the throat just behind the gills. The fish will bleed out quickly and the meat will be significantly whiter than usual. Try it!
