for the wobbling problem you should enable "advanced tweakables" in the setings and then in the "vab" right click the main parts of the rocket and enable autostruct, if it still wobbles jest autostruct more parts. for space flifgt it is more importent to move sideways rarher then up, you shuld start graduatly turn the "side" you want to fly at around 100 m/s. click the thing on the bottom left that shows yore's apelapsis and periapsis. throttle down to maintain about 1 min till the AP. when the AP is about 80 km (or higher, ass needed by case but for the beginning it is usually enough) you can shut down yore engiens untill the maneuver burn to maintain secularization. you are leaving the kerbin atmosphere at 70 km.

something to know is that none of the things on the sas menu will be useful in getting to orbit, you need to go right all throughout the flight if you want an orbit

to get autostrut, you have to enable advanced tweakables in the menu you tried looking for it at, then you can right click the parts to turn on autostrut
