For those of you new to the distilling world, a three-chamber still is a semi-continuously fed still that has a reputation for producing very robust, aromatic finished spirits. Most notably rye whiskey and rum. Evidently, this type of still became popular during the mid to late 1800s. The earliest iterations of this still were manufactured by incorporating wood into the design. Later, these still designs were no doubt strengthened and improved with the use of metals.
By comparison, double Retort systems (for example) also have a strong reputation for producing very heavy-bodied rums. The double retort operates with a larger primary kettle and two smaller ancillary kettles that derive their heat parasitically from the primary kettle. For heavy rum production, the primary is typically charged with a rum beer, retort #1 is charged with a low-wines mixture, and retort #2 is charged with a high-wines mixture.

    I was watching the Leopold brothers video on their still, and how the beer drops from chamber to chamber. This left me slightly confused. How is methanol handled in the system during the cook as beer is preheated in the upper chamber and dropped down?

    very cool! i love that they use manual labor,not machines,for the most part. i have a q,tho:do you know if the leftover empty canes are enough to drive the fires? or do they use some extra wood?

      It may very well be that at times, other materials do get used for fuel. But for the most part, the previously pressed and dried cane stalks (bagasse) is the most available and widely material used. Particularly in remote locations like the one in the video.

      Hello, Yes there will likely always be an ongoing debate about the use of silicone. Here is a commentary by James Bedner about the topic of using silicone: "The irony of all of this is that silicone is widely used for intravenous catheters, and are routinely used to administer drugs that use either alcohol carriers, or sterilants. The level of scrutiny, testing, and research around medical devices, especially those that are intended to be physically inserted INTO YOUR BLOODSTREAM is far more rigorous than anything else, period. Silicone is the most widely used plastic tubing in pharmaceutical manufacturing today, hands down. This is widely studied because of something called an “Ethanol Lock”, where ethanol is injected into central line catheters (the ones that go all the way into your god damned heart) to sterilize it and ensure it doesn’t become infected. The ethanol is intended to stay in the catheter until it’s used to inject something else, hence the “lock”. Sorry, if there was even the slightest inkling of anything being concerning about ethanol and silicone, this would not be a standard medical practice. For example: analyticalsciencejournals.onlinelibrary.wiley.com/doi/10.1002/rcm.2837 Mass spectrometry and scanning electron microscopy study of silicone tunneled dialysis catheter integrity after an exposure of 15 days to 60% ethanol solution Scanning electron microscopy (magnification 1000-20 000 times) of the inner surface of the catheter revealed no damage to the lumen surfaces of catheters immersed in 95% ethanol for 15 days compared with the reference catheter. Ok, so you have 95% alcohol, total immersion (which doesn’t happen with gaskets), and you had no damage? This was inspected with a god damned scanning electron microscope. But sure, some dude with a home-brew still in his garage spitting on flour to make a seal is going to be the arbiter of chemical compatibility? Here’s another one, this one was 70% or 10 weeks, 70 days. www.cambridge.org/core/journals/infection-control-and-hospital-epidemiology/article/abs/effects-of-prolonged-ethanol-exposure-on-the-mechanical-properties-of-polyurethane-and-silicone-catheters-used-for-intravascular-access/AA23636265A54B06A733729BE698D63C The Effects of Prolonged Ethanol Exposure on the Mechanical Properties of Polyurethane and Silicone Catheters Used for Intravascular Access These data indicate that exposure to a 70% ethanol lock solution does not appreciably alter the integrity of selected commercial polyetherurethane and silicone catheters. There are also other studies that indicate that any leaching that might occur from Silicone happens in the first 4 hours. So pre-soaking your gaskets in high proof for a few hours before washing and placing in use can be an effective technique in removing the vast majority of potential extractables/leachables. Heat simply accelerates any potential degradation that may occur. Gaskets are wear items and are intended to be replaced. If someone has concerns, simply replacing them more regularly will go a long way to eliminate any potential degradation."

    Do you monitor water temp ex dephlegmator to assist control the ABV your letting through?

      Hi Matt, monitoring cooling temps can be a helpful bit of data. However, unless you have the ability to provide consistent, uniform cooling media temps for the duration of your run, the cooling media temps will not provide dependable feedback without also factoring in the flow rate of your cooling media. In this instance it would be best to monitor alcohol vapor temps at the top of the column and adjust the cooling media flow rate accordingly.

    That initial high temp dump busts the ethanol/methanol bond and results in a much easier separation down the road. The could reintroduce the top couple inches of fluid from the final plate towers boiler and scavenge more.

      They can decide what temps and how much of plate to siphon is simply another variable for product profile to them of course nice to have more options. Some boojie mofo could probably taste the profile difference from any change.

    Can you go into further explanation of a turndown ratio? I'm guessing it has to do with the volume that passes through vs what is returned down.

      Hi Michael, The best way to think about turndown ratio is think about the operating range of the system. Or the ability to run the system further away from "spec". A wider operating range allows the operator more latitude to use less or more heat input to influence the finished product while allowing for classic, good plate behavior. I hope that helps?

    As we approach a period of prolonged cooling, distilling equipment becomes an essential matter of survival. Wine, beer and marijuana just make you high. A distiller has a longe list of essential capabilities that make it valuable to be in position of. Cleaning water for drinking, making fuel and medical alcohols, fuel for lanterns, hand sanitizer, cleaning products & of course drinking. Many more uses probably exist that I haven’t thought of yet. Here in America we are still not treated like adults.
