Not sure why you call it poor mans brisket when chuck is at least twice as expensive as brisket.
Just depends on where you live. Here in Georgia it costs us half what a good brisket costs. Betting in Texas it would be the the opposite maybe?!?!!?

Those cross hatch marks looked great! Can't ever go wrong with Hassell Cattle beef! Sooo good!
That deflector looks like bitter waiting to happen. If cooking anything that is not in a pan I never use a deflector because of the way fat collects on it and burns off with an acrid smoke and odor. It will cook just fine without a deflector.

I am absolutely breathless!!!!! This oven has been on the drawing board for quite awhile and when we bought Friedrich I had no idea!!!!! Then a little over a year ago, March 2016 Laurie told me that Bill Karau had contacted her because he had figured out the smoker part of his invention. I then had a conversation with Bill and decided to move forward with this. Well this is the result. Yeeeeehaaaa!!!
