Hi Steve, I found your video while trying to find out how to fix our CFI retarder proofer. We have a CFI bluemoon just like in your video. For some reason we are not able to control the humidity. No mater what setting it is at humidity eventually go back up to 94%. not sure how the machine removes humidity since it’s not able to control it at all. Have already check the hygrometer and it seems to be working. Also check the water valve on and off. any help would be great.
