I have an old school Cuisinart which is wonderful for cutting in butter for pastries (biscuits, pie crust, scones) but it never did a great job with coleslaw which is the main reason I want the Breville Sous Chef. I have three mixers; a huge Bosch for doubled and tripled recipes, the smallest KA which I use day in and day out (had custom painted by a motorcycle paint shop so it is the only one kept on display) and my beloved Ankarsrum for bread. I also have a Vitamix professional 7500 series. I want the Accent so badly. It literally came out the year after I finally got my Vitamix blender. It is killing me mostly because I love the idea of being able to mix tiny amounts for salad dressings, lemon zest for recipes and of course sauces. Anyway, I have been using a mandolin and know it is just a matter of time before... ouch. Think of what one might spend if it were only possible to reverse a serious injury not to mention the deductible for an emergency room visit. At least that is how I am justifying the expense. On the other hand (no pun intended) I have also read the Sous Chef blades are dangerous to hold, clean and handle as well and like the mandolin comes with a metal glove for washing and handling. Does the Sous Chef really clean up easily and most of do a great job chopping cabbage for coleslaw like the mandolin? I read good things about the Cuisinart supposedly making great slaw but I have also read it is difficult to clean which means I will never want to drag it out.
