Spicy Lamb Stir-Fry | #ceylonfoodlk | CEYLON FOOD 😊😊
Ingredients:
* 1 lb lamb, thinly sliced
* 1/4 cup soy sauce
* 2 tbsp Shaoxing wine
* 1 tsp salt
* 1 tbsp cornstarch
* 3 tbsp vegetable oil
* 1 tbsp dried Chinese chili peppers
* 1 tbsp grated ginger
* 2 cloves garlic, minced
* 1/2 onion, thinly sliced
* Spice Mix:
* 1 tsp cumin seeds, toasted and ground
* 1 tsp coriander seeds, toasted and ground
* 1/2 tsp chili powder
* 1/4 tsp black pepper
Instructions:
* Marinate the Lamb: Combine lamb, soy sauce, Shaoxing wine, and salt in a bowl. Marinate for 20 minutes or up to overnight.
* Prepare the Spice Mix: Combine cumin, coriander, chili powder, and black pepper in a small bowl.
* Cook the Lamb:
* Drain the lamb and coat with cornstarch.
* Heat 3 tablespoons of oil in a large skillet over medium-high heat. Add the lamb and cook until golden brown on both sides, then remove from the pan.
* Sauté the Aromatics: Add the remaining oil, chili peppers, ginger, and garlic to the pan. Stir-fry until fragrant. Add the onion and cook until softened.
* Combine and Season: Return the lamb to the pan and sprinkle with the spice mix. Stir to coat the lamb evenly.
* Serve: Serve immediately with steamed rice or noodles.
Tips:
* Pan Choice: Use a heavy-bottomed skillet or wok for even heat distribution.
* Oil Usage: Use plenty of oil to prevent the spices from burning.
* Spice Timing: Add the spice mix at the end to maximize flavor and aroma.
* Aromatics: Use fresh garlic, ginger, and onion for the best flavor.
* Chili Peppers: Adjust the number of chili peppers to your desired spice level.
