    Would suggest using a perforated peel for shooting it in the oven.. there’s so much flour on your wooden peel that is obviously burning on the stone :/

      Here is an affiliate link for it: amzn.to/43dN1jm - i used it with my Ooni before and it has help up well for much less than their stand. I may need to tighten my screws a bit but transparently, mine does lean a bit at times if I've been moving it around.

    I've been wanting to do a pear and brie pizza with cranberries and a balsamic reduction. After you pull it out, add micro greens. I made it as a sandwich but made a cranberry sauce that overpowered everything. Wondering if it would make a better pizza using whole cranberries scattered like the blueberries and light drops of the balsamic. At the end with the greens.

    The issue with the arc xl while it is a good oven at a great value, the new ooni that is coming out is a ridiculous value. It is 24" and has 4 spots to launch a pizza which means you can do an "unlimited" output without any heat loss. It's like having 4 ovens as it has 2 burners on either side. All for $999 It has the same side flame burners and looks like endgame as far as home pizza ovens go, at any price point.

      I had not heard about that one and did do some coming around. That does sound amazing. That said, I love the look and feel of the Gozney and whole I had been initially disappointed that it would not hold two - I realized as a home cook, I never have two pies ready at once so it would not make a difference for me.

      @@HomeOfHardy it's not about making two at a time. It's about being able to alternate between spots in the oven. people assume that a thicker stone retains more heat, but at the end of the day 2 spots is infinitely better as you have no limit to how fast you can bake if you are only doing 1 at a time. if you are baking 2 pizzas at a time or have a party where everyone builds their own pizza, you can do really high output

    I think you use to much flour or semolina and it's burn in the oven. Buy a new pizza peel perforated and it's should help with burning

    Don't do the wood...there's no extra taste...wood is a hassle...u have the best one for the value...

      I’m feeling confident for that with my pizza - I like the idea of doing it for my sourdough artisan breads but the Dutch oven method I use is working well for now:)

    I'm interested in comparing the Gozney Arc and Gozney Arc XL for pizza businesses and catering. Does the Arc hold temperature better and recover faster than the Gozney Arc XL? Also, comparing the Gozney Arc versus the Gozney Roccbox for business, with a bit more focus on the business vibe. Most reviews are geared towards home use and regurgitating data, without real restaurant experience. Even people buying for home use find added value knowing it can be used for commercial purposes. That's why everyone is asking for a comparison between the Gozney Roccbox and Gozney Arc!

      I wish I could help more on this and agree these are important comparisons for that use. I’m ultimately a home chef and do not own the other ovens for comparison otherwise I would love to do so - I hope we will start seeing some of those soon!

      The arc xl is the way to go, u can do 2 pizzas at a time...bigger is better for business...I have 1 for home use and it's awesome!

      I just ordered the Arc XL. For about $100 more it seems like an easy decision. More room to work with, pretty much same heat up time and heat retention etc.

    Could we record a slightly deeper analysis of the Gozney Arc for commercial use, including stone temperature measurements, when baking 10-15 consecutive pizzas? Recovery time for stone temperature, unofficially talked about 3 minutes... Is the Arc manufacturer planning to reduce the large front opening or add some kind of door?

    While cooking you turned the temp down to medium or low. Do you then turn it back up to max between cooking pizzas to make it heat up again faster? Or do you keep it on low for the rest of the session?

      In general I turn it up in between to return the stone to temperature but in my case there were two reasons why I was not always doing this - 1) with guests over and helping decorate the pizzas, we often did not have the next one immediately available so high makes it too hot in that time, and 2) if it was already hotter than I prefer I put it low to allow it to drop. That said, in looking at my overall results I plan to put it high and cook at a higher temp next time as my tops were cooking faster than the bottoms.

    You should get a turning peel. So much easier to work with the pizza in the oven and you won't have to touch it to make turns.

      I agree and actually just got one! If you check my Arc XL - 8 Pie video I started using it in there and did appreciate that change. Next I'll likely get a metal perforated placement peel - one step at a time:)

    How long did you preheat your oven for? I have a 1st edition Dome, where I preheat for close to an hour at 700, and then turn the heat down to low when actually cooking so the top finishes at the same time as the bottom. Might be personal preference but I think the leopard spotting is missing from your pizzas

      I agree that it did not have as much as I was hoping for. After cooking on this a few times I find within 30-40 minutes it is easily around 800 on the stone. I think between being distracted my recording video and guests I was not consistent enough with turning my flame down during the bake so the balance was off

    I used to use a wood peel then changed to a metal one I get away with almost no flour to launch the pizza

    Everyone is advertising that Arc 16, especially Arc 14, will replace the Roccobox for small pizza businesses. I am convinced that Roccobox better maintains temperature after extended use, for example, 10-15 pizzas. Arc has a large opening and loses a lot of heat; there's much discussion about this. So far, only Vito has said he doesn't see Arc as a business oven! Can you conduct a test of Gozney Roccobox vs Gozney Arc from the perspective of pizza businesses, temperature maintenance, and the ability to bake pizzas consecutively?

      Great question and I wish I was more qualified to help answer it. I do not have and have not owned a Roccbox - I just transitioned from an Ooni Fyra. Curious to hear what others say.

      @@adamcain4603 - I've wondered if they will come out with one. The only accessory called out in their communications but not yet released is a mantel - I'm curious to see if they do a door as well. I was impressed with how well it did without one, but we'll see.

      Harpland (on YT) made a video comparing (not the rocc tho) the Domes, which have small openings / doors, and Arc. Watching it and other reviews gives you an idea that the way the Arc is build, it will for sure perform better than the rocc. I had my doubts about the big opening, but the flame design and the fact that the stone will maintain a certain temp and heats up back to max super quick, makes the big opening irrelevant.

      Some Dads cook did a comparison with the Ooni Karu and his experience was that the arc stone temp bounced back twice as fast as the Karu and got up to temp slightly faster even though the Karu has a door. He did also say that a third party is hopefully coming out with a door

      No, sorry that was unclear - Artisan Bryan has a cookbook and a number of recipes. This was a sourdough crust I had started the day before. Ultimately it was not my favorite crust and I’m going to keep playing with it.

    Thanks for posting Gozney Arc content, it helps me killing time until mine arrives 😅 why use so much semolina on the peel? As you can see it will burn on the hot stone giving a bitter taste to the dough. When i started backing pizza's in my roccbox i also uses way to much semolina. After pressing out my dough ball i shake off all access semolina, and also put just a very small amount on the pizza peel and it never sticks when launching the pizza in the oven. Also a metal peel with holes will help to not stick and remove access semolina/flour.

      I did the same while waiting for mine - I hope yours comes soon! I really appreciate the tips! Still lots of learning to do! The extra semolina is probably partial a carry over from some sticky situations when waiting for my Ooni stone to get back up to temp. I have seen that most use the perforated peel for placement and have it on my wishlist for future purchase - it is helpful to understand how it has helped you.

      @@HomeOfHardy i'm already 3 years into my pizza making/learning journey and still learning every baking session. I've watched allot of TH-cam content where i learn allot from and put that into practice when baking and finetuning it to my likings. On more tip; put your turning peel shortly in the flame to heat it up before turning, this way you have less change to ripp the bottom of the pizza, like with one of your pizza's.       ​@HomeOfHardy in my Ninja oven it took a while to dry out cheese grease. Cranked up the Arc flame when a thin dough bled through and it was so nice to brush the dry ash off a lot sooner.

      Ordered my Arc xl on 3/6/24 it is now 3/30/24 and no one has an answer when I will get my oven. today I purchased a different oven and am cancelling my Arc Xl order. Fed up...

      You'll be very pleased with the Arc XL. The side-oriented burner mimics a wood-fire well. Love being able to see the coloring very easily. The temperature probe is also on the underside of the stone which allows us to know how hot it is entirely through.

    Great video. While I’m excited to make traditional pizzas on mine, I’m eager to make Sicilian and Detroit pies as well! I love that it will be able to handle a 14x14 pan!

    You're lucky to have gotten one. It looks very nice. I have the Roccbox and want to upgrade. However, they were out of stock only a few hours after launch.

      I saw that - they went fast! Luckily I saw the announcement early on in their emails and was able to get signed up for the early launch. It was just one day before the general launch and I went in within the first minute of it opening. I hope they get more in stock soon for you!

    A very comprehensive review Jonathan. Really useful to have a consumer based review, thank you. As new hearing aid user I have used Earpods Pro for a while to fill a gap and echo a number of the points you raise particularly the benefits of Earpod sound quality for music, audiobooks and TV as well as Ambient mode control. Whilst hearing aids focus on enhanced speech the quality is not the same as earbuds. Not sure if this improves with closed dome or moulded ear styles as the occulsion effect kicks in providing more bass. Phonak have recently released their 'Slim' model similar to the Signia Styletto so this may provide the full range of Phonak features with the style of the Signia models

      Remember that the Signia now have gone to the Augmented Experience AX models now. Personally I have the Phonak Paradise and I can't fault them for BT performance or sound..10/10. I was using them handsfree today in the supermarket on a phone call to a customer while carrying groceries...such is the huge benefit of hands free BT. You can also use the HA in the car to make phone calls and even get driving instructions, the weather, simply by tapping your ear....

    Thank you for the review. I plan to upgrade my signia pure 7 in the next year or two. My current hearing aids have fantastic and very natural sound quality. How did you find the sound quality over various listening environments in the phonak? On par, inferior or superior to signia?

    Jonathan thanks for taking the time to put this review together. I parallel as well in regards to not having worn any HA devices for a few years. While there are a tone of great reviews out there by great audiologists, a real world hands on from a consumer is a breath of fresh air to stumble upon. Looking forward to the Phonak review.

    Great to hear your review in comparing these two hearing aids. I also tried both brands. I tried all levels of the Styletto (3N,5N & 7N) each model for 4 weeks, in different hard hearing environments. I didn’t find a lot of difference between the levels. I found the 5N performed better than the 7N. I think this is more about the 7N not being fitted right by the audiologist. They insisted on swapping out to the open vented dome to a closed dome/sleeve with only one hole as a vent. I felt this actually hindered the little natural hearing I have left.They said this would improve the lack of clarity and average performance in noisy environments that I found when I tried the 3N and 5N. As a younger user, I really wanted to love the Styletto’s. They are stylish, different to the traditional looking aids, offered in rose gold & white and had a cool charging case. Aesthetically they were a winner, functionally for me, they were a let down. The high frequency sounds were super tinny and had lots of shrill, it was uncomfortable and affecting my concentration (not sure why or how!!!). I got them adjusted, but this didn’t help, or the audiologist wasn’t able to fit them right. All they did was reduce the volume and this dampened the clarity. So anyway they just didn’t work for me and I’ll be returning them. I’m now trialling the Phonak Paradise Audeo 90 (PPA) and the first time I tried them on I instantly noticed the difference in clarity and natural sound quality compared to the Styletto’s I tried. I’ve had them a week and the sound quality is so much better than the Styletto’s. I can also have them at a much lower volume and my own voice sounds normal. The app also is better than the Signia Styletto, as it has a lot more features for the user. Anyway I’m going to continue with the PPA-90 I have 60 days to trial them and will try and give a full review. You might be interested to know the styletto’s receiver wire come on different lengths. I noticed the wire was short and not so comfortable on my ear and they could be seen from the front. The longer option wire will sit lower on your ear and invisible from front on. Glad they work for you, wish they did for me :)

      Sorry to hear you had a bad experience with them! I know a lot can depend on the domes and the fitting you get as well as your particular hearing loss. I'm glad the Phonak's worked better for you. I was excited about a lot of their tech features but they just did not work as well as I had hoped. I hope the rest of the trail goes well for you - I would love to hear if you end up going with them!

      @@HomeOfHardy Hi Jonathan. I agree fitting and setting up is vital. I had a different experience with the Phonak P90 Paradise. I find the bluetooth very solid on both my Lenovo Laptop I use for work and my MacBook Air M1. I spend hours streaming. It switches between phone calls and streaming just fine. I have some Sony h.ear noise reducing headphones and they actually work wonderfully well over the top of my hearing aids. Mind you I don't use them that often as I just normally play music over the HomePod or Google Max speakers. Videos I just stream from the MBA. It is good to get a variety of opinions and honestly I'm not surprised that some people have trouble with Bluetooth on a particular device. It isn't the Phonak hearing aids though, just the nature of bluetooth (if you are unlucky) with some devices. I also leave my Phonak in all day every day and I haven't run the batteries out yet.

      Unfortunately, the cost vary by provider and technology level. Most providers do it as a service so you get the hearing aids and all the service on them for the time you have them as well as a certain warranty against all issues. S. mine was 6k for both aids with the case at the highest technology level. I imagine there can be quit a bit of variation on that. I fortunately had great insurance coverage for these.

    After you set up styletto on bluetooth, can you turn Bluetooth off and operate manually from iPhone. I see app has manual mode and I ask this since iPhones can usually operate only one device at a time and if on car bluethooth will not work. With hands free laws you need car Bluetooth due to stored numbers etc. also is. Apple CarPlay the solution? To remember to have to switch off before you get in car would be very annoying and not the best solution. Thank you trying to make decision and love the look of these.

      Unfortunately I don't have Car Play so I don't have this specific scenario but I can share some things I think will help. Because these are "Made for iPhone" hearing aids they don't actually show up in your Bluetooth connected device list; you make all adjustments and connections through the Accessibility settings. With this, when I connect my airpods or a bluetooth head set it will generally play from whatever the last device I connected was (usually I have the Hearing Aids on so when I get in my car and connect to the bluetooth in there it starts playing their right away). If you ever want to you can then select from the phone settings or the general auido settings which device you want it to play on. Is that helpful?

    My issue is that I can hear people talk, but sometimes cannot make out what they are saying. Do you find that speech is clearer with these?

      I have definitely found that these make a difference. This is often a problem for me, particularly when someone is talking from another room or looking away from me and this definitely helps. If you know you are going to be in a scenario where a lot of people are wearing masks I do think their mask setting would help but you have to pull your phone out to turn it on and it has not been worthwhile for me. I'll also point out, that in situations where there is a lot of background noise (ie washing the dishes) it amplifies that sound as well which can make hearing others harder. Some of the programs help with this but it is still an issue.
