Any reason to boil in such a small pan? Is that part of the technique or you just don't have a bigger pan?

This is one of the traditional techniques used in Italy, the country of origin. When pasta is boiled in a large amount of water, the starch will dissipate into the water, but with the risottato method, the starch dissolves into a small amount of boiling water and thickens the pasta.

It is a wild plant called “victory onion” or “alpine leek” that can be picked in the mountains in the spring.
Interesting to see imitation crab being cooked. In Estonia it is just eaten raw as a snack. Will definitely have to try integrating it into some meals.
I say this after making this, but I think it tastes better raw! 🤣

That and why are they constantly swirling the pan with the tomatoes? All that’s doing is causing the pan to cool down and they also lose a piece of garlic around 4:15. Not very good cooking technique at some parts, which is strange because they clearly know what they’re doing.
@@blondvampire165 Maybe to emulsify the sauce with garlic?
@@blondvampire165 If you dont, the garlic is going to burn and become bitter. Keeping the temperature from getting too high makes sense. It's like a gentle stir-fry (in fact, this might even be easier to make in a wok and maybe even taste fresher, just keeping the wok on a lower heat than you'd normally have it). The Chinese have a very similar dish made in that way.
@@Elcore turn down the heat or add the garlic in later so it doesn’t burn? Pasta sauce shouldn’t be that attention oriented
@@blondvampire165 You add it early to flavour the oil, so you're then cooking with garlic-chilli oil instead of olive oil with garlic and chilli added. Turning down the heat and leaving it alone will stew the tomato instead of frying it. There is a sound rationale behind making it the way in the video; it's sort of fusion cooking, not strictly Italian (assume the cook is Japanese) but still a completely sensible way to make a great pasta dish.
Salting pasta water is useless
It is literally the only way to season the pasta itself. For simple sauces like this it is essential. If you prefer your pasta unseasoned, then that’s your preference. But calling a universally utilized practice useless is quite silly.

I do something similar. Sautee garlic and red pepper flakes in olive oil, add white wine cook down then add grape tomatoes and capers for 10 min. Add pasta water as needed. Delicious

the point of using the pasta water is for the starch. if you use it two minutes into cooking the pasta, you arent getting the starch. there's a reason its added right at the end. youve just watered down already watered down tomato sauce
nevermind carried on watching, that was the least of critiques. hope it works out for you. you managed to make a watered down tomato soup style thing with boiled garlic. but hey you sipped some wine occasionally
One of my top ten movies of all time so of course I watched. Believe it or not I have never thought to use a skillet to cook noodles I always fill a huge pot that takes forever to heat up and uses a ton of water I'm gonna get on board with that. I assume your meatballs are turkey because if they're beef that's an odd color maybe pork? hopefully? Your sauce looks thin honestly and without a trace of actual tomato's in it it must be super blended. I didn't notice any seasoning going on either but to each their own.

Looks good man. Next time try add the mushrooms in first (and season) so you can sauté them for around 5 minutes before adding in the garlic and chilli. That way you will cook out more of the moisture and get a better mushroom/dish. Good overall job though
