One thing i do miss is the long battery life on the Ultra.

It would add abit of bulk between iPhone and case if stuck inside. it would also mean sticking the ring onto the iPhone, not sure if i would advise that.

Go with the MacBook Pro it has better specs overall, for design the pro better display than the M1 Air.

how about the ssd tbw? or how much lifespan of ssd that already use base on data?
i wouldn't advise going with the base 256GB, from applications its taken 60-80GB of space. with with files/media you will be struggling for internal space. Best to go with 512GB or 1TB.
