How to make Crème Caramel
In this video, we’re making a classic dessert-Crème Caramel! Follow along as we walk you through each step to create a perfectly smooth, rich custard topped with a golden caramel sauce. Whether you’re a seasoned baker or trying this for the first time, our easy-to-follow instructions will help you make a stunning and delicious Crème Caramel that’s sure to impress.
Makes 2 servings of 120g each
Ingredients for dry caramel:
140g castor sugar
Ingredients for the custard:
Milk - 65ml
Eggs - 140g (2 or 3 eggs)*
Castor Sugar - 50g
* Do not go over 140g of eggs, if eggs are around 120 or so, just add more milk to reach 140.
Instructions:
1) Start by adding a portion of the sugar to a dry, medium-hot pot over medium heat. Let it melt without stirring. Gradually add the remaining sugar in small increments, allowing each addition to fully melt before adding more. Continue this process until all the sugar is melted and reaches a rich amber color. Avoid stirring to prevent crystallization.
2) Once the caramel reaches your desired color, quickly and carefully divide it evenly among your ramekins, tilting each one to coat the bottom with the caramel. Let it set while you prepare the custard.
3) Slowly add one-third of the warm milk into the egg mixture, whisking constantly to avoid curdling. Gradually add another third, continuing to whisk. Repeat until finish.
4) Strain and divide the custard mixture into the prepared ramekins.
5) Place the ramekins in a baking pan and filled with hot water. Bake in a preheated oven at 160°C (320°F) for 25 minutes.
7) Remove the ramekins from the tray and wipe it dry. Let it cool down a bit before refrigerating overnight.

    What brand of yeast do you use? Mine doesnt rise that well

      I use SAF Instant Gold. But there are multiple reasons that why it doesn't rise well. The most common one is the yeast touched the salt, which will severely impact the yeast. Another factor is liquid is too hot or too cold, or just expired. If you have any questions feel free to ask more!
